| Dairy is related to people’s livelihood,and the dairy industry is a strategic industry related to food safety and national health.In recent years,dairy quality and safety incidents such as leather milk and microbial contamination have continued to be staged.Risks such as excessive veterinary drug residues and non-standard use of additives still exist,which affect the improvement of dairy product quality and the cultivation and development of my country’s dairy international competitiveness.There is great value in implementing a risk assessment.Given this,this paper constructs a dairy quality and safety risk assessment model,evaluates each risk factor,and proposes prevention and control measures.Using the news reports related to dairy products from 2012 to 2021 as the corpus,the main hazardous substances such as aflatoxin Mi,Enterobacter sakazakii,and benzoic acid were identified in the corpus.After establishing connections and summarizing,it is concluded that risks originate from 22 aspects of raw milk supply,dairy processing,and product circulation.Using the LDA probability topic model to complete the topic analysis of the corpus,17 topics are corresponding to the risk factors,and the corresponding results are used to determine the weight of the risk assessment step.Establish a risk indicator system for 3 links and 22 risk factors,and build a risk assessment model.The evaluation model mainly evaluates the level,importance,weight,and risk value of 22 risk factors.The risk assessment results show that the risk level of dairy product quality and safety in my country is level 4.The five most critical risk factors for the dairy quality and safety are failure to implement quality inspection of non-liquid dairy raw materials as required,production process flow-improper process control,factory quality inspection technology fails,Failure to implement animal feeding epidemic prevention and control as required,production process-raw milk acceptance failed.Among the three links,the dairy processing link has the highest risk,followed by the raw milk supply link,and the product circulation link third.Among the 22 risk factors,raw milk supply has 1 high-importance risk,2 medium-importance risks,and 5 generalimportance risks.There are 4 high-importance risks,4 high-importance risks,2 mediumimportance risks,and 2 general-importance risks in dairy processing.There is one risk of high importance and one risk of medium importance in the product circulation link.According to the evaluation results,it is proposed that the risk control of dairy product quality and safety should be guided by the government,paid attention to by the industry,responsible by the enterprise,supervised by the media,and jointly presented by the four parties. |
