| In recent years, there have been a growing number of events about the unsafety of dairy products breaking out in China and abroad. In this way, the whole society has paid more attention to the safety of the dairy products. The regulations and standards on food quality safety in the international trade are becoming increasingly strict, which makes the safety management of the quality of dairy products confront higher requirements. The main source which brought the harm to dairy products is not only because of the hidden node in the process of dairy production, but also is closely related to all aspects of the entire dairy supply chain. Therefore, the effective identification and accurate assessment of the quality and safety of all possible risk in the dairy supply chain is an important part of the management of the dairy safety.The dairy safety risk assessment, firstly, is to establish a set of proper risk assessment index system. Then, on the basis of established index system, the correct and appropriate methods and tools for the safety risk assessment dairy of product study will be selected. Based on the theoretical foundation of risk identification and evaluation of the fields of domestic and overseas food safety and some other relevant fields, together with the forming and characteristics of China’s dairy products supply chain, the risk factors of the four links of dairy safety, including the raw milk production, dairy processing, storage and transportation and consumption, will be analyzed through applying the HACCP system.After identifying a series of risk factors influencing the dairy safety in the dairy supply chain, the researcher builds a systematic and hierarchical risk assessment indicator system on the quality safety of dairy products according to the decided risk factors. In order to have a quantitative analysis of food safety risk in the dairy supply chain, and acquire a risk coefficient of the risk factors, the cloud theory is applied to the dairy safety risk evaluation in the present study in which a risk evaluation model based on the cloud theory is constructed as well. The examples have shown that the cloud model can effectively solve the transformation problem about the qualitative and quantitative indexes in the risk assessment index system. The cloud model both has the randomness and fuzziness, and the calculated evaluation result is more objective and accurate. And the comprehensive evaluation for complex system is more convenient and feasible. More importantly, it provides a theoretical foundation for the developing of dairy safety risk assessment system.Based on the new performance technology and friendly visual effects that comes from the developing framework of WPF of Microsoft next-generation graphics and interface, the present study finally designs and develops the system of dairy products safety risk with the C# programming language in the environment of VS 2010 and the stage of WPF, which realizes the software support function of the dairy safety risk assessment and further improves the efficiency and reliability of the dairy safety risk assessment. |
