Across the globe,there is a growing demand for more attractive and tasty foods,and an increasing demand for food nutrition and aesthetics.People pay more attention to the ornamental value of flower products,but its value as food has been underestimated for a long time,and its edible,emotional,medicinal and other values have not been fully developed.Nowadays,people pursue natural food and healthy functional food market development trend,the existing flower food to jam,candy,biscuits and other processed food appeared in the public vision.Low processing flowers(such as fresh petals,dried flowers)are affected by preservation,transportation costs,production methods and other factors affecting consumption experience,consumer recognition is not high.Therefore,exploring the edible value of flowers,improving people’s understanding of edible flowers and promoting the development of edible flower products can explore a broader market for good-looking and delicious flower food.The rose,a member of the rose family,is one of the most important commercial flower crops.This study takes edible rose as an example,based on its nutritional value and sentimental value characteristics,analyzes consumer behavior and purchase intention,explores different attributes of edible flower,and promotes the development of rose food and improves users’ emotional experience when enjoying food through the research and development of new rose food and innovative brand design.This paper is divided into six parts: firstly,it introduces the research background of edible flowers,expounds the research purpose and significance;Secondly,the value of edible flowers as food is studied.On this basis,the present situation and existing problems of edible flower products and brands at home and abroad were explored.Then conduct user research,analyze user needs to form design principles;Finally,edible rose product design and development,brand innovation design practice;In summary of the above research results,for the future development of flower food to provide a reference case.
