The green bamboo (Dendrocalamus oldhami (Munro) Keng f.) is commonly called as " Matilu", because the shape of its shoot is very like horse's hoof. This particular bamboo shoot was very delicious but very difficult to store. Therefore, they were used as tested samples in this paper. The experiment was start with the fertilization treatment on green bamboo before harvest for analyzing the effect of fertilization on the quality and profit of produced bamboo shoot. Then the aging relevant nutrient indexes and respiration intensity of green bamboo shoot were determined and their change law was analyzed after the shoot was harvested. Based on these, the drug treatment was adopted to control aging and possible mechanism of aging was discussed. Finally, a comprehensive research was done on the change of quality and physiological characteristic of bamboo shoot under low temperature storage.Inorganic, organic, and composite fertilizer treatment all definitely increased the content of nitrogen, phosphor, potassium, reduced sugar, protein, hydrolyzed amino acid, and etc, they can dramatic increase nutritive qualities of bamboo shoot.The height of implanted earth was 10cm. As for fertilizer, organic fertilizer should be mainly used with the assistant of appropriate inorganic fertilizer and composite fertilizer.The respiration, conductivity, and lignin content were increased due to wound and nutrient-stressed environment. Soluble proteins and other nutrients decomposed caused their content decrease and aging aggravation. The lignin content on the top was more sever than that at the bottom. The basal and top lignin content of bamboo shoot stored at normal temperature for 5 days was respectively up to 273.08% and 236.67% of its initial content before storage. GA and ethanol treatment delayed the content decrease of the soluble protein, and hardly influenced the respiration. However, ethylene played a reverse roie. The results indicate that GA and ethanol treatment can delay the aging of green bamboo shoot after harvest, whereas ethylene accelerates the aging.Storage experiment under 0 °C and 4 °C with different thickness of package was also carried out in green bamboo shoot. The results showed that bamboo shoots stored under 0 °C and packed with 0.01 mm wrapping bag were of the best quality when taking respiratory rate, relative conductivity, PPO, POD, PAL, and lignin content change into consideration. Single bamboo shoot packed in one 0.01mm PE bag was better than several bamboo shoots packed in one bag.
