China is a consumer power of oil and oilseeds, which has a pivotal position in the world. In recent years, with the improvement of living standards of residents and continuously open of oil and oilseeds market, edible vegetable oil consumption enters a period of rapid growth in China, but also accompanied with the regional imbalance and a greater gap between supply and demand. How to grasp the trend of edible vegetable oil consumption growth accurately, narrow the regional consumption gap, clarify the relationship of substitute between various varieties of edible vegetable oil, are important issues China had to be taken into account in the future. Therefore, to analyze the influence factors of edible vegetable oil consumption and judge the future trend of Chinese edible vegetable oil consumption reasonably, have important reference value for making domestic edible vegetable oil industry policy.This study aims to judging future trends of edible vegetable oil consumption in China on the basis of having a comprehensive understanding on historical change of edible vegetable oil consumption from the macro perspective. To achieve this goal, first of all, through comprehensive comparison and analysis on historical paths of edible vegetable oil consumption in several typical countries and regions, explore the law of edible vegetable oil consumption change in the process of economic growth and the related factors influencing the changes in edible vegetable oil consumption; Second, combine the main common influencing factors of other countries’edible vegetable oil consumption and Chinese edible vegetable oil consumption, after summarize current situation and reason of edible vegetable oil consumption in China, measure the main factors affecting China’s edible vegetable oil consumption level and structure; finally, judge the future direction of edible vegetable oil consumption level and structure change in China.The study resultsshow that:(1) There is a law of edible vegetable oil consumption change in the process of economic growth. (2) The main causes of edible vegetable oil consumption are residents’ income, quantity and structure of population, the price level, trade openness, dietary habits and health information. (3) From the point of view of edible vegetable oil consumption level, the driving forces of the edible vegetable oil consumption growth in China are the growth of per capita GDP, improvement of urbanization level and consumption inertia. The per capita and total consumption of edible vegetable oil in China are expected to grow continually in the future. (4) From the point of view of consumption varieties of edible vegetable oil, there is a huge potential market of soybean oil, rapeseed oil shows obvious nature of necessity, and peanut oil reflects the characteristics of luxuries. There is an obvious substitutional relationship between soybean oil and rapeseed oil. Price fluctuation has limited impact on relationships of all kinds of edible vegetable oil consumption. Peanut oil consumption is expected to be still lower than soybean oil and rapeseed oil consumption over a period of time. Soybean oil and rapeseed oil consumption will appear a certain increase. (5) From the point of view of edible vegetable oil consumption structure between urban and rural areas, per capita income has the largest degree of influence on per capita consumption of edible vegetable oil of rural residents. Health information has not become the main factor influencing the urban and rural residents’ edible vegetable oil consumption yet. The consumption inertia of urban residents is greater than the rural residents. The growth of per capita consumption of edible vegetable oil of urban residents is expected to shrink in the future. The per capita consumption of edible vegetable oil of rural residents will continue to increase. The gap of per capita edible vegetable oil consumption between urban and rural residents in China will gradually narrow in thefuture. (6) From the perspective of edible vegetable oil consumption by eastern, central and western residents, consumption habit is an important factor which affects edible vegetable oil consumption in the three regions.The improvement of urbanization has remarkable influence on the growth of per capita consumption of edible vegetable oil of eastern, central and western residents. The health information related to edible vegetable oil has obvious negative effect on edible vegetable oil consumption for eastern residents. The per capita edible vegetable oil consumption level is expected to remain stable even appear a certain decline for eastern residents. The per capita consumption of edible vegetable oil will continue to grow for central and western residents. (7) From the perspective of urban and rural residents’edible vegetable oil consumption in different regions, the consumption habit is an influencing factor which affacts edible vegetable oil consumption of urban and rural residents in different regions. Except for the rural residents in the west, the health information related to edible vegetable oil acquired by other regions residents has a significant negative effect to edible vegetable oil consumption. Except to the per capita edible vegetable oil consumption level is expected to decline for urban residents in eastern and central regions, the consumption level for residents in other regions will continue to grow in different degrees.
