Food safety concerns the vital interests of everyone.It is the basis for ensuring the health of individuals and improving the quality of life.It is the key to ensuring the sound operation of economy and society.Food safety is also an important issue concerned by consumers,producers,scholars and regulation government.Food safety involves every link of the food chain from farm to table.This paper studies the last link of the whole food chain.This paper is supported by the National Natural Science Foundation of China Project,Consumer Food Safety Self-Protection Behavior: Theoretical Construction,Empirical Test and Intervention Experiment.Based on the Health Belief Model,Protection Motivation Theory and Planned Behavior Theory,the paper takes the consumers purchase,processing and consumption as the main object,puts forward the tracing intervention of food handling behavior of rural households with qualitative and quantitative methods.The results of the intervention were compared and analyzed in order to put forward the suggestions for the household food safety handling behavior in conditions of China.The paper is divided into three parts.The paper found that Chinese consumers did not fully perform the role of a qualified food safety "keeper" in the last link of the whole food chain by means of face-to-face interviews,questionnaires and literature reading.In particular,consumers pay more attention to the safety and quality of food purchasing link,but the process of post-purchase processing is left in the basket.Between 30 and 40 percent of food poisoning cases in households are due to improper food handling by consumers.Influenced by the methods of statistics,the magnitude of food safety problems in households is larger.Therefore,there are risks of food safety handling behavior of households.The paper conducted a large-scale investigation in China,summarized the current situation of food safety handling behavior,and distinguished the high-risk group characteristics of Chinese consumers in food safety handling behavior.Based on the investigation of household food handling behavior in rural residents in China,the interventions were explored and implemented,and the comparison was made from the aspects of intervention focus,intervention intensity,intervention methods and intervention effect evaluation.In the baseline survey,it was found that the accuracy rate of food handling behavior and knowledge of Chinese residents was low.In the purchasing process,aspects of food labels,purchasing preferences,transportation and packaging,and purchasing channels were examined.The findings suggest that education level is significantly correlated with food labeling concern.Women,high education level,high family income are more inclined to choose the safe methods of transportation and packaging.In the thawing process,the accuracy rate of family food safety handling behavior was lower than Australia and New Zealand.In the aspect of family food preparation,the respondents' family food safety handling behavior was significantly correlated with their education level,family income and residence.The accuracy rate of rural respondents was lower than urban respondents.When it came to leftovers,rural respondents were between 10 percent and 15.72 percent which was also less than urban counterparts.In the baseline survey,it was found that people living in rural areas,with low income and low education level,were the main groups that had irregular food safety handling behaviors in Chinese households,and these groups were also the main groups that needed intervention.The results found that the effect of different intensity is remarkable.Under the continuous tracing intervention,the accuracy of the questions in the four links was significantly improved.Scores of behavior and knowledge,after the four,eight,ten times intervention,the effect is significant(p<0.05).It means the food handling behaviors and knowledge were significantly different.Thus,continuous tracing intervention significantly improved the scores of household food safety handling behaviors and knowledge of rural respondents.By comparing the effects of online and offline intervention modes,there was no significant difference before and after the intervention.For the intervention modes of online and offline,there was no difference in this intervention program,that is,both online intervention and offline intervention were effective,but the difference between online intervention and offline intervention was not significant.Therefore,for rural residents,appropriate intervention modes can be selected in combination with local economic and socio-cultural environment.The main innovation of this research lies in: first,the innovation of topic selection.At present,domestic research focuses on the stage of food purchasing,and there are few researches on the stage of family food processing.However,foreign research focuses on the intervention contents and methods,and there are few dynamic and continuous intervention studies.In this study,family handling behavior was taken as the intervention object at first time.Second,the innovation of method.In the analysis of intervention intensity,methods such as analysis of variance of repeated measures of tracking data were used to dig into the contents behind the data.Third,the expansion of theory.This paper stuied the family food handling safety,expanded the depth of the system in this field,and provided enlightenment for later scholars to study the related research direction in future.The research of this paper provides targeted suggestions for residents to improve their family food safety handling behavior.It also provides theoretical support and reference for relevant intervention research.The research results can enlightenment relevant departments to make policy of food handling in households in China.
