Abstract/Summary:
Two mutant strains, lactose-negative (LacMutant strains developed high cell numbers in lactase-treated skim milk and they preferentially utilized glucose rather than galactose. This suggests they can be used in lactase-treated milk having a substantial amount of lactose hydrolyzed to yield the monosaccharides.
