Extract from sheep spleen showed antioxidative activity in different systems,including yolk lipoprotein,linoleic acid, beef homogenates and salted ground mutton. In addition to synergistic components, antioxidant was speculated as protein or enzyme. Antioxidative activity of extract was affected little by pH of the system. Diluted extract containing antioxidants and prooxidants has higher antioxidative activity and could have potential as a natural antioxidant.
