Jasmine (Jasminum sambac (L.) Ait) is well known as a spice plant originated from India. It mainly distributes in Guangxi, Yunnan and Fujian province of China, but the utilizations of jasmine are limited. In this paper, the nutritional and health-care compositions in jasmine flower residue were studied, and the multi-utilization of jasmine flower was preliminarily discussed.The major compositions in jasmine flower residue were studied, the results showed that, in jasmine flower residues, the content of water was 5.97%, protein was 20.8%, fat was 2.4%, fiber was 12.4%, water-soluble carbohydrates was 8.04%, free amino acids (AA) was 3.41%, vitamin C was 0.21%. There were 15 and 16 hydrolyzed AA was monitored in jasmine flower residues, including 6 essential AA in free AA and 7 essential AA in hydrolyzed AA.The standard curve was made with a purified polyphenols sample, and the content of polypenols was examined to be 6.59% in jasmine flower residue. The content of flavonoids in jasmine flower residue was 3.22% with quercetin as the standard sample. Compared the content of flavonoids by water extraction to that of by alcohol extraction, the results showed that the flavonoids content in water extract was higher than that in alcohol extract from jasmine flower residue.By water extraction, alcohol sediment, removing protein by Sevag method, 4.41% of polysaccharides was given. The content of sugar in polysaccharides was 20.75%. The protein in polysaccharides were removed by the methods of Sevag and tricloacetic acid respectively, it indicated that the protein was much effectively removed by the method of tricloacetic acid.During the extraction of polysaccharides, the contents in 80% ethanol extraction, 95% ethanol soluble material, polysaccharides were 16.00%, 19.04% and 6.68%, in which the contents of flavonoids were 3.47%, 3.19% and 1.13% respectively.Different factors (proportion of solution and sample, ultrasonic power, ultrasonic time, ultrasonic temperature, alcohol concentration) were examined affected the extracting efficiency obviously during the extraction of polysaccharides by ultrasonic. With the improvement of the values (proportion of solution and sample, ultrasonic power, ultrasonic temperature, alcohol concentration), the efficiency of the extraction of polysaccharides was better, and the proper factors were at the conditions of 1: 30, 50, 80 w, 70% alcohol concentration respectively. The different ultrasonic time took little effect on the extraction of polysaccharides from 10min to 50min and the extraction ratio was stable at 20min ultimately.The effects on anti-inflammation of jasmine flower residues extracts were examined. It showed the extracts of jasmine flower residue restrained auricle swelling of mice induced by xylene obviously and had anti-inflammation effect probably, especially the polysaccharides.
