The tripeptide glutathione(GSH) is a kind of biological compound existing extensively in organism, it has essential physiological function in organism, and in medicine, food industry it has also very important using value. In addition, it's a very good model chemical compound of studying the reaction mechanism of protein and metal ions interaction in the organism. So, in this paper, the electrochemical behavior of GSH , GSH -metal ions systems was studied.The electrochemical behavior of GSH in 0.2mol/LClCH2COOH- ClCH2COONa(pH2.68), 0.2mol/LHAc-NaAc(pH4.60), 0.2mol/LK2HPO4 -NaH2PO4(pH6.70), 0.2mol/LNH3.H2O-NH4Cl(pH9.60) buffer solutions was studied with Cyclic Voltammetry and electrocapillary curve experiments and the comparatively detailed electrochemical reaction mechanism was proposed. The electrochemical behavior of GSH-Cu2+ ion system, GSH-Cd2+ ion system in 0.2mol/L phosphate buffer(pH6.70) was also studied with Cyclic Voltammetry and electrocapillary curve experiments, and the comparatively detailed electrochemical reaction mechanism was presented. These results were utilized to establish the quantitative methods of GSH determination with linear sweep polarography. After conditions optimization, we determined the content of GSH in medicine and the results are satisfactory.
