The reducing sugar contents in sugars can reflect the qua I ity of the raw material, products and the process. So analysis of the reducing sugar contents in sugars is an important analysis item. The analysis methods using now have some problems. The process of determination takes a great deal of time. And it is complex.In this thesis, near infrared spectroscopy is used as a new way to solve these problems.The main studies included as follow:1. analyzing the feasibility in analysis of the reducing sugar contents in sugars by near infrared spectroscopy2. comparing the methods used to analyze the reducing sugar contents in sugars;3.
