Chondroitin Sulfate(CS) was one of the important mucopolysaccharides from animal cartilage tissues. This thesis was to choose the optimum extracting conditions of CS from cartilage and study its effect on reducing blood-lipid, anti-oxidation in small rats.In experiment 1, CS was extracted from trachea of sheep by using dilute alkali-dense salt method and the best extraction conditions confirmed. The results showed as follows: During the CS was extracted by 20%NaCl, the liquid pH value was continuously regulated by NaOH. When the extraction temperature, salt extraction temperature, ethyl alcohol precipitation concentration was 40'C, 90*Cand 70% respectively, the quality of product was the highest. The question of defecation was settled by secondly precipitating the solution which was obtained by dissolving the first sediment. Under the best extraction conditions, the white powder of CS can be obtained with the average yield rate of 7.6%, the purity of 84.9%, the defecation degree of 0.018, and the amount of protein of 2.97%.In experiment 2, one hundred small SR rats were selected with near weight and age, and randomly divided into five groups: control group (group I),was reared on a high level fat diet, group II, III-. IV in addition to the high level fat diet of 0.5/kg, 1.0g/kg, 1.5g/kg of CS were given respectively and normal group (group V)was fed on the basal diet . Effect of CS on declining blood lipid and anti-oxidation were studied. The results were followed: (1)In blood lipidparameters, when the level of CS was 0.5g/kg, every index was not significant difference compared with control group (P>0.05);When addition was 1 .0g/kg, TC was decreased very significantly (P<0.01), TG and LDL-C were declined significantly (P<0.05), but had no effect on HDL-C (P>0.05);As for group IV compared with control group, TC ,TG and LDL-C were all strong significantly different (P<0.01), but HDL-C was significantly different (P<0.05) . (2) In anti-oxidation aspect, group II compared with group I , SOD, GSH-PX and MDA were not different respectively (P>0.05); When the addition was 1.0g/kg , GSH-PX was increased and MDA decreased significantly respectively (P<0.05) , but SOD had not rose (P>0.05); For the level of CS was 1.5g/kg , it affected GSH-PX and MDA strong significantly different (P<0.01), while SOD rose significantly (P<0.05).
