Walnut (Juglans regia L.) is an important healthy food. Walnut oil is obtained from walnut kernel which generally contains about 60% of oil. The walnut oil is relatively unstable compared to other common plant oils, which can be ascribed to its high content of polyunsaturated fatty acids. It is important to prevent the walnut oil from oxidation during the process and stoing period. Micro-capsule manufacturing is a new Hi-Tech, which the oil can be protected by the wall material. By. means of preparing soft capsule of walnut oil, increase the walnut oil storage period and improve its oxidative stability.Specific objectives of the study are:(1) Determining the operation condition of walnut oil extraction by supercritical CO2 fluid (SCFE). (2) To investigate effect of three extraction methods on walnut oil yield and physicochemical properties. (3)To analyze the composition and content of fatty acids and total flavones of walnut oil with different extraction methods. (4) To discuss stability of walnut oil by screw press extraction. (5) Research and manufacturing of soft capsules (JIAN NAO SU) from walnut oil extracted by SCFE. The main contents of the research are as following.1.The optimal operate condition which walnut oil extracted by SCFE is concluded with orthogonal design. The yield of walnut oil is 87.04% under the extraction pressure 35MPa, extraction temperature 40℃, separation pressure lOMPa, separation temperature 40℃, extraction time 3.5h.2.The yield of walnut oil obtained by three ways is sequenced:soxhlet extraction> SCFE extraction> screw press extraction. The physicochemical properties of walnut oil extracted by SCFE are superior to other two kinds of oil.3.The extraction methods have not obvious effect on the composition and content of fatty acid in walnut oil. The results indicate that the major fatty acids in walnut oil are palmitic, oleic, linoleic and linolenic acids. The content of unsaturated fatty acids of walnut oil with SCFE is more than 94.96% of the total fatty acids.4. The content of total flavones in walnut oil obtained from three ways is sequenced:SCFE extraction> soxhlet extraction> screw press extraction.5. Several antioxidants and anti-oxidation are tested by using screw press to extract walnut oil as substrate by means of oven storing method. The results indicate that TBHQ is a very strong anti-oxidant. However, a more favorable result can be obtained by using a mixture of several of the anti-oxidants.6. The suitable condition of preparing soft capsules (JIAN NAO SU) from walnut oil with SCFE is concluded. That is clean degree 1×105 class, raw materials room temperature 28℃, RH 60%, prepared capsules room temperature 20℃, RH 50%, dry room temperature 24-30℃, RH <40%, picked capsules room, temperature 20-28℃,RH<60%.7. The walnut is a nutrient nut and the kernel has high content of edible oil with good quality. The oil has numerous medical characters and can be used to treat many diseases. The oil products have no poisonous contents and can be used safely.
