The structure of phytosterol is similar to cholosterol, It mainly exists in the Unsaponifiables of plant oil. There are many kinds of phytosterols in nature, mainly including B-sitosterol, stigmasterol, brassicasterol and campesterol. A great deal of epidemiology information and the studies of laboratory show that there is a relation between the ingestion of phytosterol and the low frequency of human chronic diseases, such as coronary atherosclerosis, cancer and benign prostate hypertrophy etc. In Sept. 2000, The America Food and Medication Administer Orifice passed the healthy statement that the margarin and salad catsup consisted in phytosterol were arranged to functional food. Since that time, the study and development of phytosterol has been getting more and more recognition.At present,phytosterol mainly abstracted from deodorizer distillates of soy bean oil in our country, There have few report on phytosterol abstraction from deodorizer distillates of rapeseed oil.Therefore,This paper firstly studied the technological condition of abstraction, especially optimizing the esterifiable conditions. Then we purified the crude phytosterol, getting pure phytosterol. Secondly we analyse the structure of phytosterol. Finally, primary study and appraise the function of phytosterol, mainly consist in the experiment of antioxidant in lard and the experiment of prevention and cure on hyperlipidemia mice. The experiment results of recrystallizing phytosterol in three organic solvents shows: The purity may get 98.48% by a recrystallization in n-hexane, but its recovery is very low; The purity may get 97.72% by using anhydrous ethanol to recrystallize phytosterol, Its recovery may get 66.12%, The purity is lowest by using acetone to recrystallize phytosterol than other. The results of experiment find that the abstraction phytosterol from deodorizer distillates is mainly include B-sitosterol, brassicasterol, campesterol.As quantitative is concerned, the experiment apply Capillary Gas Chromatography, separately get the criterion curve of the admixture sterol, B-sitosterol, stigmasterol, brassicasterol, campesterol. Lastly, select the reverse HPLC to separate phytosterol; the effect of separating is very well.4.The antioxidant experiment of phytosterol in lard.The experiments adopt different dosage of phytosterol and different synergism to study the antioxidantive of phytosterol in lard.
