The thesis study on preparation and biological activity of Purple Sweet Potato Color (PSPC). An optimal extractive condition is obtained by the orthogonal experiment of multiplefactor and single factor experiments of the category of extractive reagent , extractive reagent concentration , material rate , extractive temperature , extractive time. The result indicate that the maximum extractive output of PSPC can be gained on the condition of 0.8% citric acid , 1:200 material rate , 60℃ homothermal bainmarie , 2 h. PSPC's extract were concentrated by rotatory evaporimeter, purified by AB-8 macroporous resin's adsorption. We can get PSPC's extract ( E1%1cm532nm ) of higher purity. Its yield is 3.81mg/(g PSPC powder).Study on antioxidative capacity, bacteriostatic action and antitumor effect of PSPC's extract indicates that PSPC assume a very intensive antioxidative capacity as a better free radical scavenger and anti-lipide's peroxidation inhibitor. Inhibiting effects on E.Coli,S.aureus,M.luteus of PSPC and its concentration is positive correlation. After the ultimate concentration of 1MBC E.Coli(1.25 mg/ml)PSPC applied 4h to E.Coli , the quantity of viable bacteria began to fall. After 6h, the growth curve didn't have its peak and turned into degenerative period quickly. PSPC had a given anti-sarcoma S180 capacity. PSPC had conspicuous effect (P < 0.05)when the inhibitory dose were 250 mg/(kg·d) and 500 mg/(kg·d) , inhibition rate run to 32.86%,53.12%. PSPC also can strikingly enhance GSH-Px and SOD activity, decrease MDA's content in mice plasma. It illustrated that PSPC's antitumor effect were affect by means of antioxidative capacity.
