A great deal of nutrition can be obtained from fresh pigskin . However , Pigskin is wasted as offal for the properties of peculiar smell , poor digest rate , ill taste and hard processing . Thus the technology of extracting biologically active peptides from enzymatic hydrolyzed fresh pigskin was studied systematically .Firstly , the key step , enzymatic hydrolysis process was studied . The effects of main factors were discussed and achieved the optimum reaction condition through monofactor and orthogonalizing test: pH=8 , enzymatic hydrolytic time 50 min , enzyme dosage l%o and 50℃ . Secondly , the condition of degrease process was studied . Confirming Na2CO3 as degreasing reagent through lots experiments , orthogonalizing test was applied to get the effects of main factors in the degrease process . The results were : degreasing temperature 40℃ , reaction time 40 min and the density of reagent 3% . The condition of decolouring process was discussed finally , which indicated that pH=7 , 50℃ and 15 min were the best decolouring conditions .In the process of studying enzymatic hydrolytic conditions , the method of Abbe' refraction meter determining refractive index was put forward inorder to controlling enzymatic hydrolytic degree conveniently and quickly . The feasibility was deduced theoretically and was verified through the experiments .A new technology of biologically active peptides' preparation was obtained during systematically studying the technology of extracting biologically active peptides from enzymatic hydrolyzed fresh pigskin . The results proved that it has simple technology, mild condition , scarcely destroying peptides and could keep nutritive value and has higher yield . Hence it is a kind of potential effective method to extract peptides , and has bright prospects of industrial practice .
