With soybean dregs as material, this paper discussed the extraction process ofsoluble dietary fiber (SDF) and its influence on proliferation of bifidobacterium. Theextraction process of bean dreg SDF was identified and optimized, among which theparameters of extrusion process was extrusion temperature of 100°C, feedingmoisture of 16.8%, screw rotate speed of 150r/min, as well as the parameters ofextraction process are material-water ratio of 1:15, enzyme volume of 50μl, extractiontemperature of 60°C, extraction time of 1.5h and pH6. Under this condition, SDFyield was up to 22.8%.According to the characteristics of SDF extraction process of soybean dregs, thepan membrane module is applied in the ultrafilteraion of SDF. The optimum processparameter was critical operation pressure of 0.17MPa, operation duration of about 2hours. After membrane separation, the SDF purity was up to 86.68%. This methodobviously reduced the reagent.The result of SDF monosaccharide composition showed that the monosaccharidein SDF of soybean dregs is mostly rhamnose, arabinose, xylose, glucose and galactose.The rheological behavior of SDF was determined in different concentration,temperature and pH, which showed that the SDF solution of soybean dregs in certainconcentration have the characteristics pseudo plasticity liquid. At the same time, theinfluence of temperature and pH change on the SDF solubility was discussed.This paper studied the functionality of SDF of soybean dregs. With the typicalBifidobacterium longum and Bifidobacterium infantis in human intestine asexperimental bacterial strain, the effect of SDF on promoting the proliferation ofbifidobacterium is investigated and the influence of substrate concentration on theproliferation of bifidobacterium.
