The sesame is, so far, the most ancient seed used as resources in food by mankind and the condiment used at the earliest stage as well. It contains abundant greases and proteins, having nice edibility. A sesame grain carries 45-63% grease with the average value 50%; 19-31% protein with the average value 25%;20-25% carbohydrate including the coarse fibre;4%- 6% crozzle. There is about 80% unsaturated fatty acid in witch there is 50% the ω-poly 6 unsaturated fatty acid in the sesame oil and the main constituent of the ω-6 poly-unsaturated fatty acid is linoleic acid(C18:2) including a small amount of the y-linolenic acid(C18:3). The compound material of the poly unsaturated fatty acids such as the y-linolenic acid, the arachidonic acid, the adrenic acid and the docosapentaenoic acid etc. witch is important to the human body physiologically is the linoleic acid, if the human body lacks the linoleic acid, they can't synthesize these poly unsaturated fatty acids.Moreover, men with corn for staple food will have high possibility to be lack of the linoleic acid, therefore, it is quite necessary for them to complement the exogenous linoleic acid to hold their health usually. In recent years, people attach importance to the physiological function of the co-6 poly unsaturated fatty acid and its medicinal values at home and abroad.Based on its construction characteristics and the different way of the mutual transmutation in human body ,the poly unsaturated fatty acid can be divided into two series: the co-3 and the co-6 primarily. The ?-6 poly unsaturated fatty acid includes the octadecadienioc acid(also called the linoleic acid)(LA);the calendic acid(also called the y -linolenic acid)(GLA);the eicosatetraenoic acid(also called the arachidonic acid)(AA).We can get the co-6 poly unsaturated fatty acid from ample microorganism, animals and plants resources. Because there are plentiful linoleic acids in the sesame, this experiment will extract the unsaturated fatty acid from the sesame.Researching for many years, people know the physiological function of the co-6 poly unsaturated fatty acid unambiguously. The co-6 poly unsaturated fatty acid has the specialphysiological function because of its particular structure. It can prevent and ease various cardiovascular diseases; accommodate the growth of the cell; have the very high anti-cancer activity; restraint the gastric ulcer and the gastrorrhagia; The ? - 6 poly unsaturated fatty acid also has the function of augmenting the insulin, the weight reduction and strengthening the immunity etc.. Its application study realm extends continuously, expressing the good market foreground.The sesame is a special resources in the western region of Jilin province, but currently the sesame product stays at the stage of low extra gain such as processing sesame oil, sesame paste etc., lack of the comprehensive utilization of the high extra gain, therefore, the sesame resources advantage in the province of Jilin is, so far, still has not convert as the economic advantage. This research adopts the high and new-technology industries of the critical CO2 extracts and the gas chromatograp to purify the co-6 poly unsaturated fatty acid, and I makes it into a health food in form of the soft capsule, this method not only can make the precious resources into the utilization of a high extra gain, but also can increases the stability of antioxidation, promoting the economic benefit of the sesame process business enterprise significantly. It's one of the efficient paths to resolve the sesame problems in province Jilin fundamentally.This thesis is the important content of the athwart collaborative project ({Study on high additional value comprehensive utilization of sesame and trituration of serial product )> between Jilin Agriculture University and the Sesame Industry Office in Da'an city, and mainly reaches on the extractive technique of the co-6 poly unsaturated fatty acid in the sesames and the preparation technics of the soft capsule, and acquires findings below:1.Defining the optimal process conditions of the supercritical CO2 extraction of the ?-6 poly unsaturated fatty(the linoleic acid mainly): the pre-processing temperature 150°C,the extraction pressure 30 Mpa, the extraction temperature 45 °C , the extraction time 2.0h, CO2 discharge 15 Ls/h.2.Adopting the gas chromatography to mensurate the eo-6 poly unsaturated fatty acid in the white sesame seed from the Da'an city qualitatively and quantificationally, the result indicates it contains the linoleic acid 19.3g/100g sesames, the y-linolenic acid 0.53g/100gsesames.3.Defining the condition of the optimal compound antioxidation. The condition of the optimal antioxidation is the VE add-on 0.5%, the BHA add-on 0.05%, the TBHQ add-on 0.1%, and adopting wall material III.4. When the dosage of the co-poly 6 unsaturated fatty acid got on the condition of the optimal supercritical extraction is 1.50 g/kg, it restrains the increasing of the chmice's total cholesterol and triglyceride caused by yolk notability. With the dosage increasing (3.00 g/ kg), this kind of the restraining function enhances, but when the amount of dosage reduces to the 0.75 g/kg, there is no this function.5. When the dosage of the co-poly 6 unsaturated fatty acid got on the condition of the optimal supercritical extraction is 1.50 g/kg, it restrains the increasing of the alloxan chmice's total cholesterol and low density lipoprotein. the sets of 0.75,1.50,3.00 g/kg can make high density lipoprotein go up obviously.6.The chmice is tested acute toxicity and 90 day's feeding with the co-6 poly unsaturated fatty acid soft capsule made through this technics. The result indicates: the product belongs to the nontoxic class, the mutagenicity and genetic toxicity is zero, showing this product is not poisonous and harmless to health, and it is edible.
