Polygonatum Polysaccharides (PP) exists particularly in Polygonatum Sibiricum Red (PSR), which not only is food, but is Chinese traditional medicine. Pharmacological investigations indicated PP can lower the blood glucose and blood pressure and regulate the serum lipids and so on. To study the extracting technology of PP and the decoloring technique of the extract are important to deeper the process of PSR and the development of functional food and medicine of PP.In this paper, based on studying hot extracting of PP, the supersonic was applied to strengthen the extraction and the supersonic extracting was optimized using response surface methodology. Then, the primary theory of decolorization was studied by resin adsorption.The extracting test showed that the best hot extracting technology of PP was that: the particle of 100 mesh size;90℃ of extracting temperature;1:40 of material to solvent ratio;2 h of extracting time;2 times of extracting times, the extracting rate is 11.685%.Supersonic extracting can improve the extracting rate and reduce the extracting time and simplify the extracting process when using fragment of PSR as extracting stuff. The better supersonic extracting technology was that: 1:23 of material to solvent ratio;2.6min of extracting time;2 times of extracting times, the extracting rate is 15.587%.The decolering test showed that: the resin of LSA-8 was better than other nine kind of resin. The adsorption isotherms showed that the adsotption was best at 40℃ and was favourable pattern as the favourable pattern adsotption was knowed applicable in food development, the best initiatory chromatism value was 600. The adsorption isotherms had good pertinency with Langmuir model 1/Q=1/Q0+1/(KadQ0ΔEab*0), (R2>0.95). The adsorption course was well pertinent with the equation θt=a(b-ect), (R2>0.95).
