The folk utility history of Kudingcha and components determination and their biochemical activities were reviewed here. The processing techniques and chemical components of Ilex Latifolia Thunb were studied. The method for determining rutin and quercetin by HPLC were estabilshed. Effect of tannase amounts and treatment time on the quality of Ilex Latifolia Thunb infusion were discussed too. All the results were showed as below:1. The way for determining rutin and quercetin by HPLC is reliable. Retention time of rutin and quercetin are 32.5min and 39.52min, respectively. The recoveries of rutin and quercetin were 98.36% and 98. 85%, respectively. The relative standard deviations of rutin and quercetin were 1. 01% and 1. 02%, respectively;All of the correlation coefficients between the concentration of rutin and quercetin and the HPLC response areas were higher than 0.99, which indicated that the method was simple, rapid and accurate.2. Ilex Latifolia Thunb fresh leaves from Xuzhou district (Zhejiang province) were, processed by steaming skilling, withering, rolling, shaping and drying. According to the tasting and determining results of made Kuding tea, the reasonable processing parameters were established.3. The aroma of made Kudingtea infusion was measured by simultaneous distillation and extraction (SDE) equipment. The, results came out there were 54 types components in the solution, 66.32% of all were composed of 20 types alkene, 8 types hydroxyl components, five kinds of aldehydes, 5 kinds of ketones and fiveesters. Linalool showed the higest content,was 24.02%.4. The effects of different dosages or different treating time of tannase activity onthe transparent and chemical contents of Kuding tea solution were studied. Theresults showed that 0.01%~0.02% dosage of tannase was most suitable for thesolution transparent .The catalysis of tannase for the tea infusion quality when pH6.0,and treating timefrom 30min to 45min was the best.
