Corylus heteropgylla Fisch, which is also called filbert, is a kind of tree of great economic value. Hazelnut is a nature functional food resource together with nutrition, treatment and healthy care. It can be cooked in many ways. The reports showed that hazelnut is rich in fat, protein, carbohydrates, dietary fibre, minerals, vitamines and eight essential amino acids for human body, among them fat contains approximate 50.6%~60.3%. The content of unsaturared fatty acid in hazelnut fat is higher than that of most of vegetable protein oil-bearing crops. Lots of reports showed that hazelnut acts as an important role in curing disease. It can adjusting the balance of eating pattern , controlling the fat content in blood effectively, moderatig the pressure of blood, decreasing blood cholesterol levels, lessening the chance of coronary heart disease, and playing an important role on the bone growth. The high amount of V_e disoluabling in hazelnut oil is considered as an inhibitor of cancer and diabetes., It is also an important raw material for food industry and oil producting. Therefore, as an edible oil of high quality, the utilizing prospect of hazelnut is bright and wide.But hazelnut has great inconvenience because of its non-solution in water. What is more, the large amount of unsaturated fatty acid in hazelnut oil is so easy to be oxidated and becomes spoiled that quite difficult to storage. Using microcapsule technoloy, hazelnut oil can be maken into solid granular oil and fat powder, which solves the problems that exist in the industry applying. Microencapsulation by spray drying is the most widely used method to producing oil and fat powder in food industry.The aim of the study is to solve the problems when hazelnuts applicating in food industry. Microencapsulated technology was adopt to make the liqid hazelnut oil into solid powder. Thus the application field was enlarged as the state of hazelnut oil turned into solid powder. Not only the theory basis and practice experience were accumulated for the further research, but also the blank in hazelnut oil and fat powder was filled in. The paper also provided the continuable industrialisation way for wild hazelnut of Changbai mountain. As a part task of a project from Science and Technology Department of Jilin Province "Study on Exploiting and Utilizing of Changbai Montain Hazelnut Resource" , the paper mainly completed tasks as below and corresponding conclusions were got:1. The method of preparing hazelnut oil microencapsulation by spray-drying was confirmed.This method was decided through the results of judgement on the microencapsulated hazelnut oil by sensory organ quality, and the factors of feasibility and economy about the test were considered at the same time.2. The wall materials were selected according to the results of encapsulation and economy, and the suitable materials for wall were determined. We discussed the common use wall materials in food industry, and the optimum wall was selected as follow: soy protein isolate( SPI )and maltodextrane( MD )as the main materials, carboxyl methyl cellulose sodium( CMC ) as stabilizer, sucrose fatty acid ester ( SE) and glycerol monoester as composite emulsifier.3. The ratio and dosage of the emulsifiers and the condition of the emulsifying techniquewere obtained. On basis of the single factor test, the optimum wall material composition was obtained by orthogenesis test in the preparation of hazelnut oil microcapsules by spray-drying. The result was as follows.the ratio of SPI to MD is 0.8:1, the ratio of core to wall is 0.5:1, the amount of stabilizer ( CMC ) is 1%, the ratio of sucrose fatty acid ester to glycerol monoester is 9:1, the content of emulsifier is 0.5%, the concentration of emulsion is 10%.4. The optimum spray dehydration technological parameters were confirmed. The result of the orthogenesis test indicates that the optimum parameters about microencapsulated hazelnut oil techniques were as follows: the frequency of homogenizing was 3, homogenizing pressure was 40MPa, feed temperature was about 40 °C ~ 50 °C, temperatures of inlet wind and outlet wind were 180°Cand 90 °C, respectively. The microencapsulating efficiency of hazelnut oil is about 87% on the condition above5. The characters of microcapsuled hazelnut oil prepared by spray drying technic was evalued. The preparation of hazelnut oil showed milkiness in colour, and the content of moisture , the density and solubility were about 2.53%, 0.71g/cm3 and 93.1%, respectively. It provided with certain dispersion and admixture.
