Microencapsulation is a technology that enveloping core material to small globate grain by means of physical method or chemical method using film forming material, the main purpose is extending core resting period, preventing oxidized, enshrouding badness smell.Esterifiable-catechin can be easily oxidized because of its strong antioxidation, it can solve this problem by means of Microencapsulation.The paper's purpose is in search of equal measure for Esterifiable-catechin Microencapsulated, confirming optimal experiment condition.First study is spray-drying method, through the single factor experiment confirming the technological parameter obtained such as the primary emulsifying agent is Span-80 and Tween-80, the content of primary emulsifying agent is 12%, HLB value is 5, the proportion of impregnant to soybean oil is 1:3, the proportion of soybean oil to water phase is 1:5, the secondary emulsifying agent is sucrose ester, containing 3%, the solid raw content is 30%.In above foundation, considering combined influence of certain factors, obtain optimal experiment condition is revealed by orthogonal design, the proportion of albumen to carbohydrate is 1:4, shearing time is 15 min, shearing speed is 3000 r/min, and the inlet temperature temperatures is 170℃. The microencapsulation efficiency reaches 76%.Secondly, the spray cooling method is studied in the paper. Through a series of single factor experiments, the optimal technological parameters are given: the inlet temperature temperatures is 100℃, the spray pressure is 0.2 MPa, the proportion of core to wall material is 1:10, the proportion of EC to stearic acid is 1:4, the content of solids is 20%, and the microencapsulation efficiency reaches 93%.In conclusion, Esterifiable-catechin can be embeded to solid powder, which takes on well decentrality, well fluidity and convenient deposited by microcapsule technology, and can be used in food field and medicine field for its well stability and polymer film wall material.
