Liquor is a traditional drink in china, also famous in the world as a kind oftequila. It is one of the seven distilled spirit in the world. With its long history,consummate techniques, special style and much yield, it won the support of largepeople in the word .For a long time, liquor has already become an indispensableconsumable in citizen's daily life and social associations as a traditional beverage.The liquor industry holds the balance function in the national economydevelopment.However, the liquor that distilled out lately was generally hot, not full-bodiedand not soft. So it needs some time to store to eliminate miscellaneous flavor, andthen the liquor become soft, full-bodied, aroma was increment, and taste washarmonized. This change was called aging.In the process of aging, the storage usually needs much long time, much manymachines and workshop, and put off a great deal of funds, at the same time, leakingexhaust is also greater. It affects funds turnover seriously, meanwhile the cost ishigher, and isn't seasoned with the modern economic development. So the study ofaccelerating aging of liquor has become an important topic.This paper took the "yushu daqu" as study object which make in JiLinprovince. By the mean of high intensity pulsed electric fields (PEF) which wasself-made, using chemical analysis, gas chromatography, sensory evaluation foranalysis method, the effect of accelerating aging by high intensity pulsed electricfields (PEF) and its related principle were studied, and the conclusions are asfollows:(1)Using main component analysis to converts many factors which affect thequality of liquor to a single one, and educed weights and a comprehensiveexpression, thus simplified the follow-up analytical process. Its comprehensiveexpression was:Y=0.4494x1+0.4528x2+0.1245x3(x1: total ester, x2: total acid, x3: total aldehyde)(2)Comprehensive other methods of detecting peroxyacetic acid and hydrogenperoxide, take into the improvement, and get a new method which could detectthem simultaneity. In this way, the process of experiment was simplified. And then,apply the golden section method to fix on the quantity of peroxyacetic acid, and theresult was 500-1000ppm.(3)It was found that the effect of accelerating aging was notable with the increaseof pulse number by the single factor experiment, and regression equation of pulsenumber and the comprehensive mark was: y = -0.0002x2 + 0.0331x + 0.9119,R2 =0.9932;The effect of accelerating aging by field strength was displayed in a certainscope. When it was less than 30kv/cm, the content of total aldehyde, acid, ester and alcoholincreased with increase of field strength, but when it was more than 30kv/cm, they weredecreased with increase of field strength.(4)It was found that the factor of affect accelerating aging greatest was pulsenumber(C) by orthogonal test, and it was the notable factor whose level ofsignificance was 0.01;The next one is field strength(B), and it was also the notablefactor whose level of significance was 0.05;the last one was the concentration ofperoxyacetic acid(A), which wasn't the notable factor. The best combination wasA1B2C1, namely, pulse number: 50, field strength: 25kv/cm, concentration ofperoxyacetic acid: 500ppm(5)Arrange quadratic general rotary unitized design near the best parameterwhich was fixed by orthogonal test, and establish the Mathematics model. Pulsenumber=50, field intensity=29.17kv/cm,(6)It was found that the liquor which treated by PEF, whose result of alcoholdegree, total acid and total aldehyde was between one year and six year, and theresult of total ester was more than six year. The final comprehensive mark was2.5218, which was more than the six year (2.04).The content of fusel oil andmethanol was decreased, especially the content of methanol came to the level for6-10 years. It was also discovered that the liquor which treated by PEF didn'tappear to "return raw" after placed for 30d, so the effect of accelerating aging wasvery satisfaction.(7)In order to validate the effect of accelerating aging, discuss the feasibility ofindustrialization, the author carried through the scale-up production. It was foundthat the result was consistent with the laboratory's small sample.(8)At the base of analytical hierarchy process, this paper fixed the weight of eachfactor. And then, with fuzzy comprehensive evaluation, the quality of sensory wasanalyzed. In this way, subjective and man-made factors were avoided, and obtain acomprehensive, quantitative, valuable system.(9): Establish the second evaluation system by color, aroma, taste and style. Theweights of first evaluation by analytical hierarchy process were:Au1=(0.2914,0.3434,0.1470,0.2182),Au2=(0.3124,0.3014,0.1145,0.2717) ,Au3=(0.2511,0.2413,0.2587,0.2489),Au4=(0.3212,0.2410,0.3278,0.1160) , Theweights of first evaluation by analytical hierarchy process were:A =(0.1024,0.3021,0.4231,0.1724).(10): Establish judgment factor set U and judgment factor set, and get the result ofthe first comprehensive evaluation: B1=(0.7053,0.1974,0.0973,0),B2=(0.6262,0.2352,0.1329,0.0057),B3=(0.6232,0.2255,0.1389,0.0124),B4=(0.6249,0.2533,0.1102,0.015),and the mark was: 92.303,91.43,91.26,91.67;the resultof second comprehensive evaluation was: Bu'=[0.6324 , 0.2302 , 0.1278 ,0.0096],and the mark was91.436. It was obvious that the liquor which was treated by PEF achievedexcellence. So its sensory quality was rather nice, and the effect of accelerating wasvery good.(11)The relation of aroma component and favor in liquor was studied,and theprinciple of nature aging and PEF accelerating aging were discussed from chemicalreaction and hydrogen bonds.This paper took PEF to accelerate the aging of liquor. No mater chemicalindex or the sensory, this kind of liquor achieved the standard of the liquor whichwas storied for six years,and didn't appear to "return raw".
