Allicin is the main active component in garlic, it is an active organic sulfide which is being from alliin by catalyzed of alliinase when the garlic was crashed,it has the function of anti-bacteria, lower the blood pressure and blood grease, prevent cancer, so allicin could be used to prevent much disease, and its clinical application is more and more extensive ,allicin as an drug or health care product is promising.The methods of extracting allicin can be classified into three groups: steam distillation, solvent extraction, supercritical (?)fluid extraction, but the content of allicin extracted by steam distillation is very low, so the activity of extraction is very low. In the paper, the single factor and orthogonal experiments were used to determine the optimal conditions of solvent extraction and supercritical fluid extraction, used colorimetry to determine the content of allicin in the extractions and the products of allicin , used GC-MS to analyse the relative content, of allicin and other active components in the products.The study on the result of solvent extraction showed: the crashed garlic shiny was kept under 38°C for 20 minutes, used 95% ethyl alcohol to extract allicin, the rate between the garlic slurry and 95% ethyl alcohol(?)was lg : 4ml, extracted for 80 minutes under 30°C,then concentrated the extraction with rotate evaporation apparatus until 1/4 volume left, the rotate speed was 75 r/min, the distillate temperature was 50 °C and the pressure was 0.01MPa, the content of allicin in the concentration was 2.13mg/ml and the extraction rale was 2.26g/kg (relative to raw material). Used nanofiltration membrane to remove impurities, the diameter of nanofiltration membrane was 150Da, pressure was 0.6MPa, temperature was 35°C , the nanofiltration membrane could intercept 80.7% impurities , 91.1% allicin could pass. Freezed dry the passed solution for 12h in the conditions of -20°C,3.0×10-6MPa, the product of allicin was got, the content of allicin in the product was 13.4%, the extraction rate was 1. 70g/lcg(relative to raw material).The study on the result of supercritical fluid extraction showed:the garlic cut into the size of 45mm, the volume of kettle is IL, put 40(lg garlic into (he kettle for...
