| In this study, six emasculate health yak were selected randomly with 3~4 years from the field in Gannan Hezuo region and three local cattle were selected as comparison. They were butchered together and some studies were tested and analysed, such as separating serum, measuring body size and weight, meat quality, serum biochemistry indices. And some correlation were analysed. The results were showed as below:1. Traits of slaughter: The slaughter year of Gannan yak was 3~4, weight 210kg, dressing percent 51%, net percent of carcass 72.34%, which was lower than local cattle.In body size and carcass traits, they had differences and many had significant differences (P<0.05orP<0.01).2. Nutrition component: Gannan yak's meat had abundant nutrition. The protein content was 21.43%, fatty 3.13%, dry matter 26.56% and Cu,Fe,Zn,K content were plentiful. Amino acid sorts, EAA and TAA content were higher than local cattle. So Gannan yak's meat was a kind of meat resource with healthy, nutrition and good quality.3. Eating quality: Gannan yak's meat colour was red darkly, marbling good, muscle fiber a little thicker but tenderness moderate and the meat had lower losing water ratio, higher holding water capacity and cooking percentage than local cattle's meat, which showed Gannan yak's good processing characteristic. In a word, Gannan yak was a kind of good meat resource with no fishy smell, rich juice and good taste.4. Serum biochemistry indices: Gannan yak serum biochemistry indices had difference with local cattle. Many had significant difference or very significant difference (P<0.05orP<0.01). This inherent biochemistry characteristic decided yak's growth and healthy, which was important to breed and choice good yak. Gannan yak's LDH activity was higher than cattle's (P<0.05), but CK, AMS, T-CHO, GH, T3, T4 lower than cattle (P<0.05orP<0.01). |
