The safety and innocuity nature pigment has the nutrition and pharmacody function. It has been widely used in many applications, such as in foods, medicine and cosmetics etc.. Anthocyanin widely consists in the blossom and fruits of various vegetables. And the anthocyanin pigment extracted from them is the natural pigements which has been allowed to use by WTO. Because of its good color, pure flavor, and some important pharmacody function of refreshing eyes and minds, attention has been centered on it in recently. And the demand of it exceeded its supply. At present, the extraction of the anthocyanin pigment is limited by the natural resource, so the suitable natural vegetable resources should be exploited immediately.In this paper we tried to extract high quality anthocyanin pigment from the fruits of Rhamnus, which is abundant in zones of Mountains Changbai. The extract condition, enrichment of the anthocyanin, and the process arts of the final production are analyzed in detail. Through experiments, the optimum extraction conditions of hydrochloric acid solution extraction were obtained. The physical and chemical proterties of the red pigment from the fruits of Rhamnus and its stability in different conditions have also been studied. The results are as follows:1. The optimum extraction conditions of hydrochloric acid solution extraction were 0.70% hydrochloric acid solution, ratio of solid and liquid(1:10, g/ml);extraction time 4h at room temperature;time of extraction:3 times.2. The maximum absorption wave length of the red pigment from the fruits of Rhamnus is 520nm.3. It is provident by the experiment that there is abundant anthocyanin in the fruits of Rhamnus. It is the best extraction resource of the anthocyanin pigment.4. The pigment was sensitive to sunlight and heat.5. The pigment was very sensitive to Fe2+, Cu2+and Fe2+, and stable to...
