Study On Antioxidant Activity Of Polyphenol From Banana Peel

Plant polyphenol is closely linked with human life. As a savageness substance with biological activity, plant polyphenol effects digest, nutrition and health of human. Plant polyphenol has been proven to posses various activities such as restraining bacilli and virus, antioxidation, resisting mutagenesis, anticancer. Because of these, plant polyphenol has been used in fields of food, medicine and cosmetic.In this paper, extraction, purification antioxidant activities were studied. The result of orthogonal experiment showed that the best extracting conditions were ethanol concentration 80%,temperature 80 ℃, time is 3 h, extractive degree 2.Two methods to purify banana peel polyphenol were studied. The water phase was dissolved in water-ethyl acetate( 1:1 ,v/v) solution, dissolved three times. The yields of polyphenol increased from 10.45% to 58.47%.
