The dissertation mainly studied that the waxy maize starch as the raw material was prepared Octenyl Succinic Anhydride Modified Waxy Maize Starch (OSA-WMS) and got the optimization technique, studied the OSA-WMS physico-chemical properties, and conducted the research to the OSA-WMS acid degradation(in water and in alcohol). Particular research work as follows.Octenyl succinic anhydride modified maize starch was prepared in aqueous slurry systems and the major factors affecting the esterification were investigated systematically. The experimental results indicated that (1) There was the height order of affect factors of the degree of substitution (DS), pH value, hydrolysis time, concentration of starch, temperature. (2) determined the optimization technique of OSA-WMS through the orthogonal experiment, the pH value is 8. 5, the temperature was 35 *C, the reaction time was 6 hours, the concentration of starch was 35%, the a octenyl succinic anhydride was 3% (by dried starch weight), may make the DS of OSA-WMS about 0. 0200.The physicochemical properties and the microscopic structure of OSA-WMS were studied. The experimental result indicated that, (1) the OSA-WMS along with the DS enhancement, the transparency, the swelling power had the enhanced, the freezing and thawing stability had strengthened, retrogradation had reduced; The OSA-WMS paste had high shear-thinning behaviors, belonged to the pseudo-plastic fluid; (2) the esterification reaction made the granule of OSA-WMS had a change to some extent, the OSA-WMS granule surface changed quite roughly, the granule edges and corners changed quite fuzzily.
