Octenyl Succinic Anhydride modified starch (OSA starch) was made by starch with Octenyl Succinc Anhydride (OSA) that introduces a hydrophilic group and a hydrophobic group. OSA starch was an excellent emulsion-stabilizing agent and applied in many areas due to its good properties imparted by modification. In the present study, OSA starch was prepared with waxy rice starch made in laboratory, and its partly physical-chemical properties were investigated, especially hydrochloric acid hydrolysis properties in water and ethanol medium evaluated by rate of hydrolysis and apparent viscosity of OSA starchhydrolyzed.1. Extration of waxy rice starchThe relatively pure waxy rice starch as starch source of OSA starch was prepared byalkali extraction method to remove protein, and the optimum condition of preparation was established: at a concentration of 0.3% NaOH solution, for 5×24h, and at 25℃. As aresult, the waxy rice starch containing 0.37% of protein was prepared.2. Preparation of OSA starchThen the effect of reaction parameters including pH, temperature, time and starchconcentration of suspension on degree of substitution(DS) was studied, and maintaining reaction with pH 8.5-9.0, at 35℃, for 6h, and 35% starch concentration of suspension was preferred by orthogonal test. And the degree of substitution of OSA starch was about 0.02 at above preferred condition with 3% OSA (dry base of starch), which was permitted infood application.3. Partly Physical-chemical properties of OSA starchThe apparent viscosity of the paste of 3% OSA starch (w/w) was determined atdifferent rotate speed by rotary viscosity analyzer.
