| Dietary fiber has been defined as remnants of plant cells resistant to hydrolysis by human alimentary enzyme, and its main chemical constituents are hemicelluloses, cellulose, lignin, pectin, gums and waxes. There are three main methods to produce dietary fiber enzymically .chemically and physically.We study the processing of extraction of dietary fiber from phyllostachys praecox f.preveynalis by Trichoderma viride and chemical treatment. Compared with chemical fiber. Luster, flavor, function nature and the chemical contents of fermentation fiber are superiorer.Parameters of fermentation are investigated by the orthogonal experiment. Orthogonal tests resulted in optimum fermentation conditions as follows: 8% Trichoderma viride, at 32℃, at pH7, for 48h.Compared with raw materials, the chemical contents of fermentation products have changed. The amount of protein has cut down. While the amount of Soluble dietary fiber has arisen, and the amounts of salt also increase.We detect the effect of fermentation fiber and chemical fiber on abiding of heavy metals. The capacities of fermentation fiber for abiding Cd2+ ,Pb2+ and Cu2+ are 38.8, 37.4, 35.3 μmol/g; The capacities of chemical fiber are 35.5, 34.8, 33.6 μmol/g. The capacities of raw materials are 30.4, 30.7, 29.1 μmol/g.
