In this study, a high performance liquid chromatographic method for the determination of taurine in foods and health foods was developed and evaluated. After derivatization with 9-fluolenylmeghyl chloroformate(FMOC) at 40℃ in alkalescent environment (pH=8.0), taurine in samples was separated and quantified by HPLC. The conditions of derivatization, such as the dosage of derivatization reagent, reaction temperature, derivatization time were studied. And the chromatographic conditions, including the selection of column, the composition of mobile phase, column temperature, the flow rate of mobile phase and detection wavelength were investigated. The selected derivatization conditions were: 400μl derivatization reagent(1.5g/L) and the same volume of borate buffer(0.30mol/L,pH=8.0)were added to 100μl standard solution or sample solution, then acetonitrile was added to make the total amount be 1.0ml.
