Hawthorn is a kind of Rosaceae family plant widely spread in China, and is one kind of fruits which combines food nutritive value and medical value together. Hawthorn contains many kinds of chemical composition with physiological activation, the proanthocyandins among them usually has very strong antioxidant ability. In this paper, the Optimum extracting condition and the optimum refined method of proanthocyandins from hawthorn, and the antioxidant ability and stability of hawthorn extracts were studied.Firstly, this paper compared the two extracting methods which were circumfluence extraction by ethanol and microwave irradiation. According to the orthogonal experimental design, the optimum extracting condition of proanthocyandins from hawthorn by circumfluence was showed as follows: extracting solvent was 70 % ethanol, extracting temperature was 80 ℃, solid-liquid ratio was 1:15, extracting time was 2 h and extracting thrice. According to the best process conditions, the content of proanthocyandins from hawthorn was 3.62%. Microwave power was 340W, the optimum extracting condition of proanthocyandins from hawthorn by microwave irradiation was showed as follows: extracting solvent was 60% ethanol, solid-liquid ratio was 1:10, extractmg time was 210s and extracting twice. According to the best process conditions, the content of proanthocyandins from hawthorn was 4.03%.Secondly, the results indicated the adsorption capacity and elution ratio of D101 type of macroreticular resin were the best in these types of macroreticular resin. By the determination, the concentration of proanthocyandins from hawthorn extracts was 10mg/mL, the quantity of sample was the half volume of resin bed, the distilled water of volume of 10 times of resin bed eluted to fully absorbed, and adsorption temperature was 45 ℃, pH=3.0, solvent of elution was 75% ethanol, adsorption ratio and elution ratio were 4ml/min and 2ml/min respectively, the purity of the proanthocyandins from hawthorn was 38.7%, the reclaimed ratio was 94.1%.Finally, the antioxidant ability and stability of hawthorn superfines were studied. The superfines showed stronger scavenging ability on DPPH radical and superoxide radical ( ? O2-) in vitro, and FRAP ability of testing than ascorbic acid . Temperature and storing time had a certain influence on the stability of hawthorn superfines. In order to guarantee that hawthorn superfines have relatively high antioxidant activation, stored under 4 ℃ of conditions.
