In this experiment, sweet potato residue which after starch extraction was taken as raw material, and we studied the extraction process of dietary fiber from sweet potato by sieving. The content of sweet potato dietary fiber which prepared by this method was analyzed in its basic content, fiber content, mono-polysaccharide and galacturonic acid content.1. The optimum sieving conditions through orthogonal experiment were .The results were as follows: material/extraction ratio was 1:60, the sieving time was 20 minutes, the frequency of sieving was 3.75 Hz , and the pH value of solution was 7. Under these conditions, total dietary fiber content was 81.25+0.28% in sweet potato dietary fiber, and the ratio of insoluble dietary fiber and soluble dietary fiber was increased.2. The sweet potato dietary fiber which prepared by sieving method consist with 81.25+0.28% dietary fiber,15.47+1.19% soluble dietary fiber,60.65+1.74% insoluble dietary fiber, it has 13.68+1.87% pectin, 23.28+1.89% hemi-cellulose, 35.01+0.25% cellulose, 21.59+0.99% lignin.3. The pectin substance in sweet potato dietary fiber consist with fucose, rhamnose, arabinose,galactose, glucose, xylose. The highest mono-polysaccharide is galactose, its content is 31.96%.The hemi-cellulose substance in sweet potato dietary fiber consist with fucose, arabinose, galactose, glucose, xylose. The highest mono-polysaccharide is glucose, its content is 59.38%.4. Study on the physicochemical property of sweet potato dietary fiber, the result showed its WHC, OHC, SC, viscosity is deeply influenced by temperature. SC is also influence by pH value of solution.5. In vivo experiment, we discussed the viscosity changes in gastric and small intestinal digestion, the result is that after 4h gastric digestion simulation, the viscosity of dietary fiber is higher than other time, and in small intestinal digestion, its viscosity increased too much.
