Experimental Studies On Purification Of Cooking Fume By Using High Gravidity Technology

The dietetic custom in our country is different from overseas,we process food mostly by frying and decocting, and cooking fume arises during frying and decocting process. The component of cooking fume is extreme complicated, which comes from not only organic fume due to decomposing of grease, protein and other stuff under condition of high temperature, but also gas-liquid-solid mixture pollute from oil particle, material, oxidization and combustion fume. There are filter separation method and electrostatic precipitation method and so on. Filter separation method removal the particles via the cooking fume gas pass through filter layer, it has advantages of easily mounting, high efficiency, but the net easily being blocked up, high pressure drop and energy consumption. Electrostatic precipitation method has more removal effect and lower operating pressure drop, but the grease membrane easily accumulation on the surface of electrode, which prevent the electrostatic field discharge, and lower removal effect.In the paper, the thought of purification of cooking fume by using high gravidity technology was proposed to removal cooking fume relying on great high gravidity field, it involves several removal mechanism including packing sever filter, crash assemble and inertial settling, which aims to purification of cooking fume with high efficiency and lower cost.In the paper, the formation and harm of cooking fume was reviewed. The special high gravidity device was designed according to complicated prosperity of cooking fume, and the whole technological process was built. The influence factors on systemic pressure drop and removal efficiency were studied by carried out experiment. The result indicated that the optimum condition: high gravidity factor of 100-150, the ratio of liquid to gas is greater than 0.00005, the removal efficiency was beyond 85%, the concentration of cooking fume that being renovated is about 0.8mg/m~3,which conform to effluent standard of the food and beverage industry.In the paper, the removal cooking fume process was analyzed, the liquid drop was broke up into film and little drop in the high gravidity field, cooking fume was change its flow orientation, and the oil particle was soaked, packaged, accumulated and captured, so the rotating packing provide good field for removal cooking fume, which help to high efficiency of purification of cooking fume.
