Due to the eating habits of China,edible oil is heated to high temperature and then boiled, stir-fried,cooked,or fried,so the cooking process will inevitably produce a lot of oil fume. Oil fume contains many kinds of toxic chemical compositions,it has inhalation toxicity, mutagen city,carcinogenicity,immunotoxicity and reproductive toxicity to the human body. If fume was discharged directly without being treated,it will cause serious pollution to the environment.Along with the rapid development of China's economy,the scale of the restaurant industry expands rapidly,pollution of oil fume has drawn more and more attention. At present,fume purification technology of the restaurant industry mainly contains mechanical separation method,electrostatic drecipitation method,liquid washing method, filtration method and so on.However,these methods of purification technology have many disadvantages:low purification efficiency,high energy consumption,equipment complexity, high operating costs.Therefore,it is necessary to find a new purification technology to solve the above problems.In the article,the formation,composition and hazards of the fume were discussed in detail,and theory of high-gravity technology for purification fume is analyzed.The flow direction of the gas fume changes constantly in the packing with high rotating speed and at the same time absorbing liquid has been ripped into drops of micron order.Accordingly,the contact area of gas-liquid is enormous and the collection efficiency of the absorbing liquid for oil fume is greatly enhanced.Theory of high-gravity technology for purification fume is an Collection of inertia collision,block effect,pervasion effect,centrifugal separation filtration separation and liquid washing.Accordingly,gas-liquid-solid separation of the oil fume gas can be successfully achieved,it can achieve the goal which aims to purify oil fumes efficiently,economically and environmentally. In this paper,oil fume gas in number one refectory of North University of China is studied as a research object,technical process for the oil fume purification is established.With the oil fume as absorbent,the significance of operating conditions such as high gravity factor, gas rate,gas liquid ratio were tested by the study of orthogonal experiment,and the best operating conditions were determined;The paper inspected the static absorption efficiency and dry-bed absorption efficiency of oil fume purification by the High-gravity Technology, and the law of the effect on these by the operating condition.The paper also inspected the absorption performance of the different alkaline solution,and the absorption performance of the alkaline solution and oil fume was compared.The experimental results show that:the efficiency of fume purification factor increased with the High-gravity factor increasing,and decreased with the gas rate and gas liquid ratio decreasing.In the conditions of the ratio in the high gravity factorβ=257,gas rate of 90m~3,gas liquid ratio of 600(m~3/m~3),the efficiency of fume purification reached 92.2%,concentration of oil fumes after worked about 0.9mg/m~3, lower than the required standard 2mg/m~3.On the comparison of the absorption performance of two kinds of absorbent,the absorption performance of concentration of 5%of alkaline solution and oil fume was nearly equal.Technology of oil fume purification by High-gravity technology has many advantages: high purification efficiency,stable operation,low investment,small occupation,facile operation and management,without secondary pollution,etc,it has enormous economic benefits,environmental benefits and practical significance.
