The thesis is about the extraction of effective components by different methods from dry ginger and fresh ginger,using steam distillation, solvent exctraction and supercritical fluid CO2 for extraction and GC-MS technology for identifying different effective components. The result is following:1. The methods of steam distillation to extract effective components from ginger were identified . The best procedure parameters of fresh ginger extraction time is 3h, material to water ratio 1: 4, grain with 1mm.The extraction rate of essential oil reached 9.34%. The best procedure parameters of dry ginger: material to water ratio 1 :50, grain with 0.28-0.45mm,extraction time is 1h.The extraction rate reached 2.73%.2. Taking dry ginger as material and acetone as extraction solvent, by orthogonal experiment, regarding the content of oleoresins as the index, the optimistic combination is :extraction temperature 80℃, extraction time 3h, metarial to solvent ratio 1:9.The extraction rate reached 5.7532%.3. The most effective parameter on SFE of dry ginger is pressure, next is temperature, time is third ,the last is particle's diameter. The optimistic parameter is temperature 40℃,time 1h, particle's diameter 0.3-0.2mm,pressure 22Mpa.The extraction rate reached 3.26%. The most effective parameter on SFE of fresh ginger is temperature, next is pressure, then time. The best parameter is temperature 35℃,time 3h,pressure 2Mpa,the extraction reached 7.86%.4. Using GC-MS to get the quantity-determination and quality-determination of extraction by different methods. 60 compounds of SD, 43 compounds of solvent were identified and 66 compounds of SED extraction5. Conclusion : The process of SD is a open system.and the extraction of main fragrance compounds are sesquiterpene and single terpene, the gingerols are not be extraction. Extraction of solvent is simple and the extraction of main compounds are gingerols .Both fragrance and piquance ingredient are identified in the extraction of SEF, the process of SEF have precedence over SD and extraction of solvent.
