Beef omasum is one of the most popular by-production of ruminant, but untilnow there still have no effective method of eliminating black membraneof ruminate fore-stomach and the method of tenderization. This papermainly studying the eliminating black membrane ofruminant fore-stomach and the property of tenderization andWater-holding potential .The main results were shown as follow:(1) The different effect of lactic acid, sodium hydroxide and H2O2 oneliminating black membrane of beef fore-stomach is analyzed by thetests. The result states that the lactic acid is feasible and effective.Especially in the aspect of eliminating membrane drastically and thedegree of cleaning after membrane being eliminated. In same condition,treating with lactic acid, the black membrane of beef fore-stomach hasbeen eliminated more effectively than any other method.(2) A three-factor orthogonal rotation is used and second-order regressionmodel is employed. Regression model has been established. There is noother fact besides lactic acid concentration, temperature and time hasobvious effective on eliminating membrane of ruminant fore-stomach.The effect on eliminating membrane of ruminate fore-stomach can beforecast with regression model which has been established. The optimumconditionsare lactic acid concentration 2%,30℃and 25.6 min.(3) The fuzzy mathematics is used to evaluate the sensory qualities of beefomasum treating with lactic acid of different concentrations. And whatthe result states was consistent with the result which has beenforecast with regression model. It means the results of the test to eliminating black membrane of ruminate fore-stomach with the optimumconditions as lactic acid concentration 2%,30℃and 25.6 min wereaccording with the require of the senses of the consumers.(4) The study of the effect with different concentration of compoundphosphate on swelling after black membrane of omasum has beeneliminated shown that with the increase of the concentration ofcompound-phosphate, the weight-add and water-holding potential hasincreasing also. The optimum condition of compound-phosphate is 3%.At the same time, water-holding potential can attain 95.1% andweight-add can attain 61.8%. Both of them have got the highest value.(5) The study of the effect on tenderization of omasum has been showed thatthe effect of tenderization of omasum has showed a downtrend after auptrend. The tenderization of omasum can get the best when theconcentration of compound enzyme was 3%. As the omasum being treatedwith the same concentration of compound enzyme, the trend of thetenderization of omasum was stabilized after an up-trend with the timeincreased. It means time has no marked effect on tenderization ofomasum when tenderization got a certain degree. Compared with contrast,the different concentration of calcium chloride has marked effect ontenderization of omasum. But the different between effects ofdifferent concentration of calcium chloride on tenderization of omasumwas not marked. Consider with the aspect of economy efficiency, theoptimum concentration is 250mmol/l.(6) Three-factors orthogonal trial is used, and the results state thattenderization of omasum was effected obviously in successive order:the concentration of compound phosphate, the concentration of compoundenzyme and the concentration of calcium chloride. The optimumconditions are concentration of compound phosphate is 3%, theconcentration of compound enzyme is 3%, the concentration of calcium chloride is 250mmol/l, the concentration of compound phosphate is 3%,and the water-holding potential got the highest.(7) The study on the treat method of tenderization of omasum show that:the efficiency of tenderization of omasum can be diploid using themethod of injection, more then this, the method of injection candecrease waste and made the tenderization of omasum well-proportioned.(8) The result of the test of pollution-free index shows that all of theten index of test are lower than the criterion. So the omasum processedwith the method in this paper is completely accord with pollution-freecriterion.(9) Hazard has been analyzed in the processing of Ruminate fore-stomach,and the critical control point has been established.
