Based on such testing factors as weight loss, firmness, PPO activity, respiratoryintensity, degree of browning and visual index, the storage technology of agaricus bisporus atdifferent natural fresh-keeping agent as well as the postharvest physiology were studied in thispaper, which provides the theoretical proofs for the commercial storage of agaricus bisporus.The results showed that the agaricus bisporus is a kind of conclimacteric fruit. With theprolongation of storage, the weight loss of agaricus bisporus increasedgradually, the respiratoryintensity and PPO activity of agaricus bisporus increased quickly to the maximum value, and thecontents of total sugar of agaricus bisporus decreased meantimely. The effect of the temperature oneach index was very obvious. Low temperature was advantageous to delay the quality dropping andthe senescence of agaricus bisporus. Compared with other temperatures, (3±1)℃could obviouslyreduce the weight loss, the maximum value of the respiratory intensity, PPO activity, the lossof the contents of total sugar of agaricus bisporus, and delay the time of the respiratoryclimacteric.This article studies is divided two parts.The first part has studied the soaking agents.Theagents include sodium pyrophosphate, thecitric acid, antiscorbutic acid and the calcium chloride.Agaricus bisporus was processed with different density of the sole factor. During the storage of theAgaricus bisporus, the indexs as degree of browning, firmness and visual index were tested.Base on the single-factor experiment, it can choose out the suitablly range of the single agent,which provides the proofs of range for the next orthogonal experiment.The orthogonal experimentof Agaricus bisporus was design by the method of the orthogonal combination design of four factorand four levels.It tested the degree of browning of the face,inner and stem, firmness and PPOactivity.The experimential findings are analyzed by SAS software,So base on the single-factorexperiments, orthogonal experiment and selection experiment the optimal amount was got: 9 g·L-1sodium pyrophosphate; 10 g·L-1 thecitric acid; 0.3 g·L-1 antiscorbutic acid; 0.8 g·L-1 calciumchloride.The second part has studied the coating agents.The agents include methyl cellulose, calciumchloride, antiscorbutic acid and Sorbic acid. Base on the single-factor experiment, orthogonalexperiment and selection experiment, it test indexs as weight loss, firmness, PPO activity,respiratory intensity, degree of browning and visual index. The experimential findings areanalyzed by SAS software..So the optimal amount was got: 10 g·L-1 methyl cellulose, 0.8 g·L-1, calcium chloride, 0.4 g·L-1 antiscorbutic acid, 0.5 g·L-1sorbic acid.The experimental results and the theoretical research have proved that fresh-keeping agentwith MA storage technology has a better action, which could store agaricus bisporus for 10 days.The technology provides necessary support for industrialization of agaricus bisporus, and deservesto be popularized as soon as possible.
