Industrial Agaricus bisporus is facing deterioration,short shelf life and a lot of waste of resources at the harvest time.In order to pro-long the shelf life of Agaricus bisporus and solve the problem of waste of resources.This paper mainly takes A15 Agaricus bisporus as the research object to study the effects of different fresh-keeping techniques on the quality of Agaricus bisporus and explore its mechanism.The experimental results mainly provide fresh-keeping technical reserves for the development of Agaricus bisporus industry.The main results are as follows:(1)By analyzing the changes of weight loss rate,hardness and color index of Agaricus bisporus under different storage modes.The relationship between respiration and temperature and humidity was explored.At the same time,combined with sensory evaluation,the effects of vacuum precooling treatment and storage mode(temperature)on the fresh-keeping effect of Agaricus bisporus were revealed.The results showed that vacuum precooling had no significant effect on Agaricus bisporus stored at room temperature.It had a significant effect on Agaricus bisporus stored at low temperature.Cold storage at 1? more beneficial to the storage of Agaricus bisporus than a refrigerator at 4 ?.Lower temperatures reduce the intensity of respiration and delay the arrival of the respiratory peak.Vacuum precooling combined with 1 ?cold storage has the best fresh-keeping effect on Agaricus bisporus.On the 12 th day,compared with fresh Agaricus bisporus,the weight loss rate was 1.49%,the hardness decreased by 28.56%,and the color difference was 12.16 NBS(National Bureau of Standard),comprehensive sensory score was 7.98.Vacuum precooling be combined with cold storage prolonged shelf life of Agaricus bisporus to about 12 days.(2)The changes of quality indexes of Agaricus bisporus under different magnetic fields at 1 ?were determined.The changes of total microbial amount,MDA,p H and nutritional composition of Agaricus bisporus during storage were studied.The inhibitory effect of magnetic field on microorganisms was revealed as a new technology,and its mild action was demonstrated.The effect of Agaricus bisporus treated with 2m T alternating magnetic was the best.The weight loss rate was only 1.65% at the end of storage(12 days),and the browning degree decreased by 42.3%.The comprehensive sensory score was 8.1.Magnetic field pretreatment combined with cold storage prolonged shelf life of Agaricus bisporus to about12 days.(3)Using factory waste mushrooms,combined with torreya essential oil as a natural coating material.To study the effect of the new natural coating agent on the quality of Agaricus bisporus during the storage process.By measuring the polyphenol oxidase(PPO),peroxidase(POD)and superoxide dismutase(SOD)and phenylalanine ammonia lyase(PAL)of Agaricus bisporus found that Agaricus bisporus polysaccharide(ABP)mainly reduced the activity of PPO and PAL and increases the activity of POD and SOD,which leaded to the accumulation of phenolic substances and prevents double Browning of spore mushrooms.It is proved that the crude polysaccharide of Agaricus bisporus had antioxidant effect which can be used as the outer protective layer of Agaricus bisporus.The test of Pseudomonas,yeast and mold proved that the essential oil of torreya had an anti-bacterial effect.Agaricus bisporus polysaccharide compound 500 ppm Torreya essential oil(ABP/TEO5)has the best effect.At the end of storage(16 days),the weight loss rate was only 2.31%,the hardness decreases 26.73%,the color difference value was 21.75 NBS,and the comprehensive sensory score was 7.92 points.Coating treatment combined with cold storage extends the shelf life of Agaricus bisporus to about 16 days.(4)The experiment determined the best storage mode for 1?.The methods of vacuum pre-cooling,magnetic field and coating technology to extend the shelf life of Agaricus bisporus were studied.Both vacuum pre-cooling and magnetic field pretreatment can extend the shelf life of Agaricus bisporus to 12 days.Compared with the coating technology,using 1? storage alone improves the shelf life of Agaricus bisporus to about 16.The factory can choose the appropriate storage method depending on the actual production and sales.
