With the rapid development of our economy, food industry and the population expand ceaselessly. The environment pollution problem caused by food industry and kitchens becomes worse and worse. To open out a kind of new decontamination technique becomes so imperative.At present several methods on disposal technology of oil fume have been developed at home and abroad, such as filtration process, electrostatic process and wet process. But these methods have several disadvantages, such as high costs, low efficiency, high consumed and so on. So, a new disposal technology of oil fume should be found to solve this problem. Method of atomization water made by ultrasonic technique in oil fume removal has high rate of removing the oil fume and it lead a way for our country in oil fume-removal.Finging the removing mechanism, the best running parameter, and raveling out the problems in research is the purpose of this study.During the research, use Spss for windows, the award winning data Processing of Orthogonal Design package, to do the complicated analysis quicker and beter. Meanwhile, with the liner regression function of SPSS, the purifying efficiency equation is found by the analyse on Processing of Orthogonal Design data. The capacity experiments have been designed and the mathematical model is established about the purifying device. The experiment looked for the most splendid certification along with mathematical model, acquired Regression model of the compound that oil fume, and looked for the most splendid operation operational mode.
