With globalizing of economy and rising of people's consuming level, the consumer's demand for the high quality meat products was constantly increasing. Recently, consumers do not trust the food safety because it is difficult for them to obtain pork production information without the information transfer under the condition of constant outbreak of epidemic diseases, gradual separation between production and consumption, and the complexity of food processing. Traceability for livestock product was widely recognized as an effective measure for any food safety control system, which could supply production imformation of each process and make the information transparent. Curently, our country's traking and tracing systems of pork product were not efficient enough, neither could they satisfy customers'needs and make the available control. The objectives of this paper were to confirm the key ingredients of safe production on chilled pork using methods, such as detection and isotope technologies, and develop the available traking and tracing system. This system was based on the practical situation of China. It could help consumers to confide in pork safety and encourage the pork industry developing.Based upon the analysis of the entire production on chilled pork, the potential critical points and influencing factors of microbial contamination on this chain had been researched. The results indicated that pork was contaminated by some external conditions during the process of slaughtering, transporting and marketing, such as tools, producers, envirments and so on.The heavy metal contamination of the same pork chain was studied, supported by the ratio of 206Pb/204Pb, 207Pb/204Pb, 208Pb/204Pb and the content of Pb, Ge, Hg, As, Cr, Cu, Zn. The samples were determined using the inductively coupled plasma mass spectrometry (ICP-MS). And then the data were performed using multivariate analysis including ANOVA and cluster analysis (CA). It was found that feed was the main contaminant.The Pb comtamination was from soybean meal and wheat bran. Moreover, in different parts of pork, the accumulation of Pb was the same, but there were significant differences on the value of Cr, As, Cu, Zn, Cd.Practical key factors including chain factors and critical safety factors were chosen according to the key effects on safety of pork products, relevant laws and standards, and analysis of contaminants'resources. And a system of key factors for traceability had been developed.By analyzing the practical way of identification, controlling method for pork identifications had been put forward by using the animal ear marker for pig individual identification, combining with the RFID for carcass and bar code label for retail cuts. And considering the actual application of information technology on the production enterprises, the tracking and tracing system was built which can be realized by the B/S structure. The whole system included four function modules. There were function module of Information Collection, central database, Information Processing, and Information Query.
