In recent years the international market raised a research boom of functional food, This inject a brand-new content into the food industry. Many experts believe that the 21st century will be functional food century. The research of functional food will be a major issue in the 21st century. Xylooligosaccharides play a vital role in functional foods because of their unique physiological function, has aroused widespread concern in the world. Countries in the world has a dozen varieties of Xylooligosaccharides commercial production, which are widely used in the animal feed industry and the various health care products, infants and the elderly food, the variety and scope of applications are increasing rapidly.The study on Xylooligosaccharides started in the 1990s in the 20th century in our country. The research of Xylooligosaccharides has been in charge of the attention of the national science and technology department. The application prospects of xylooligosaccharide production are very broad. The production methods of Xylooligosaccharide includ acid hydrolysis, high temperature degradation, bio-degradable and microwave degradation. Except the methods of bio-degradable are difficult to apply to industry, because there are several shortcomings which are not suitable for separation and purification including technical difficulties, the reaction rate difficult to control, too much byproducts of response. The enzymatic degradation have the best prospects for industrial application, because its reaction speed is easy to control, and it has intensive specificity, and only produces little byproduct. Xylooligosaccharides usually make natural plants as raw materials, and xylanase is used to directionally degrade xylan in the plants into Xylooligosaccharides of different polymeric degree, and then through a series of separation, evaporation and drying processes in the system.This experiment separates from xylanase productional strains by elective medium, designs orthogonal experiments, and explore the optimum condition of producing xylanase by solid and liquid fermentation. The optimum temperature of fermentation is 32°C, and pH6 is better at the beginning of the experiment, and the ratio of solid-liquid quality is less, the ratio of 4.50% is best, inoculum and ventilation have minimal impact. The temperature and the amount of coverage is the big factor in solid-state fermentation, the vaccination 3mL (4.4×108/ml).temperature from 32°C to 28°C enzyme production. When the initial pH is 6 relatively good. The best conditions for the enzyme dosage of trichoderma viride hydrolysising corncob steam explosion is 100U/mL, pH6.5. temperature at 55 and the best hydrolysis time is 8h. In addition, the paper also have a preliminary discussion for Xylooligosaccharides purification ,the purification of Xylooligosaccharides with activated carbon column. The deionized water can be cleared to gain a single monosaccharide components,with 5% ethanol elution.,two wood sugar can be washed off, 60% ethanol can be cleared to gain three wooden sugar, four wooden sugar, five wooden sugar, xylooligosaccharide composition. With TLC identification of the enzyme solution xylooligosaccharide, the results are same as TLC.
