Abstract:To study a method determination of trace acrylamide in water and food, chloramphenicol(CAP)residues in fishery products by solid metro phase extraction--Pressurized Capillary Electrochromatography(SPE--pCEC).Methods:The acrylamide was extracted and adsorbed from sample by active carbon,wash down the acrylamide with methyl alcohol,The sample solution was analyzed by UV- Pressurized Capillary Electrochromatography using standard curve quantitation,with a mobile phase of methanol and water(5:95,V/V)at the rate of 0.075 ml/min and detected at 200 nm, pressure of-10KV.Results:The detection limit of this method was 5ng/g.The results showed a good linear(R =0.999)in the concentration range of 0.5~200μg/ml,the recovery was 59%.The amount acrylamide in the potato with different brand could de determined in the select conditions.The average contant of acrylamide in potato chips is 1.92μg/g,The method also provides a fast,simple,practical way to determinate trace acrylamide in sample.
