The study definited Monascus sp.ZZ is the ergosterol greatest production of Monascus which included Monascus sp. ZZ, Monascus rubber ZK, Monascus prupurers GX, Monascus sp. XM. It was fermented 675. 4μg ergosterol, and the peak of production was in 120h, at this moment, it was fermented 746.1μg.When compare the measurement between HPLC and UV, we found the difference of determine result was not remarkable.Studied on the liquid culture fermentation, we found that 10% inoculation could make the fungi fermented 772. 8μg ergosterol, and 30℃temperatare could make fungi fermented 747. 6μg ergosterol, 220r/min rotation could make fungi fermented 775.1μg ergosterol.Studied on the liquid medium, we found that 3. 0% lactose could make the fungi fermented 1024. 1μg ergosterol, and 2. 0% beef extract could make the fungi fermented 1351.1μg ergosterol, 1.00% MgS04 could make the fungi fermented 957.9μg ergosterol.Through regression analysis and design of analytical experiments, we found the complex liquid medium were 3. 7% glucose, 3.0% yeast extract, 1.7% (NH4)2SO4, 0.5% MgS04, 1.6% KH2PO4. And the medium made the Monascus sp. ZZ fermented 2678.6μg ergosterol in each gram of weight.
