The Brier grape(Vitis davidii Fo(e|¨)x.) from Baimapu was determined to be the sample on this research,by the main chemical components and the color-value were mensurated of three Brier grape in the east of Hunan.The solvent and microwave extraction technique were studied and optimized,and the effects on Vitis pigment of the two methods were contracted.Including,the applications of Vitis pigment to food industry were researched.1 Research on the chemical Components of Vitis davidii Fo(e|¨)x. SkinVitis was enrich in the alimentative ingredient:the content of the solubale substances was11.86%,the content of the total sugar was 9.76%,the content of the protein was 0.342%,the content of the VitaminC was 9.68 mg/100g,which was 1.2,1.51,1.47 and 1.61 times to that of Jufeng respectively.The flavor matter was abundant with the fattiness 0.218%,which was 1.5 times to Jufeng.The components disliked in being processed and synthesis used were lower:the cellulose was 3.4%,the tannin was 0.786%, which was 46%and 52%of that of Jufeng respectively.2 Analysis of Character and Color-value of Vitis davidii Fo(e|¨)x. Skin pigment2.1 Vitis pigment was a water-dissolved natural coloring matter.It can dissolve in polarity and half-polarity impregnant,not in non-polarity.The Vitis pigment spectrum in 0.01%HCl-MeOH was scaned,and the wavelengh was536.0nm,which was the character-ristic absorbant spectrum of anthcyanin.The Vitis pigment had different structure form and color from red→purple→blueness→green→yellow in water-solution with pH1~12, and the visible spectrum showed that:the Vitis pigment had the characteristic absorbant spectrum of anthcyanin when pH<4,and disappeared when pH≥4.2.2 The pericarp ratios of three Vitis and Chixiazhu,Hongti,Jufeng were contrasted. The pericarp ratios was 30.43%,which was 1.46,5.07,1.76 times to Chixiazhu,Hongti, Jufeng.The Vitis pigment coulor-value was high.Its coulor-value was 13.00,with 2.43, 2.87,1.76times to Chixiazhu,Hongti,Jufeng.In order to get equivalent pigment,the asked the cost of Vitis 14.28%,1.14%和1.11%to Chixiazhu,Hongti,Jufeng respectively.3 Research on the Extraction Technology of Vitis davidii Fo(e|¨)x. Skin pigment3.1 Common Solvent ExtractionThe single factor experiment of Vitis pigment in different different solvent,the extraction time,the temperature,the solid-liquid ratio were studied.The solvent of pH=3.1 was carried,with the temperature 60℃,40℃,time 180min,60min,solid-liquid ratio 1:15,1:5 as the fluctuate of orthogonal rotational combination design.The response surface model was optimized and a equation reflected the connection among the extraction time,temperature and solid-liquid was establish.Though the multiple regression analysis and experimentation,the results indicated that considering the high extraction rate and activity of Vitis pigment,the optimal condition described were:the extracting temperature was45.7℃,extracting time was 128.3minute,the solid-liquid was 1:13,the stair extraction was 89.97%,and the anthcyanin amount was 2.5227 mg/g.3.2 Microwave Assistant ExtractionWith the water-solution of pH=3.10,the three factor of the extraction power(800W,640W,320W),solid-liquid(1:10,1:8,1:5),time(180s,140s,160s)were studied to orthogonal experiment L9(34).The primary and secondary factor was detemined,which was the extraction power>solid-liquid>the extraction time,and the best condition of extraction were:the extracting power was600W,extracting time was 160second,the solid-liquid was 1:8,the stair extraction was 89.97%,and the anthcyanin amount was 2.3300 mg/g.4 Application of Vitis davidii Fo(e|¨)x.Skin pigment4.1 Application of Vitis davidii Fo(e|¨)x.Skin pigment on YoghourtThe effect on the the sensory,physical,chemical and the lactobacillus amount of yogurt adding Vitis pigment were studied by this experiment in the fermented process at different stages.3%of Vitis condensed pigment was determined to be the best additional amount.The results show that:the Vitis pigment have no bad effect on the quality of yoghourt but it can accelerate the fall speed of pH,the increase speed of acidity.4.2 Application of Vitis davidii Fo(e|¨)x.Skin pigment on JellyThe addition and application of Vitis pigment on the jelly process were groped.The effect on the jelly quality by adding Vitis pigment and the stability of Vitis pigment during being stored time of 180d were discussed.3%of Vitis condensed pigment was determined to be the best additional amount.The results show that:the additive quantity and kinds of sugars were:8%granulated sugar+2%sirup,and the additive quantity and kinds of sourness were 0.14%citric acid+0.01%malic acid+0.01%lactic acid+0.15%citric acid kalium.
