The hop plant (Humunus Lupulus L.)had been used in the brewage in thousands years, gave characteristic flavor and frank bitter of beer and increased antiseptic capability and anti-biological stability of beer. As forα-acid and flavonoids index, this experiement studied the extraction hop concrete by microraythis.As forα-acid loss percentage index, this experiement studied the dry method of hop. This experiement studied the antioxygen activity of hop concere. The main results were as follows:1 Asα-acid index, the optimal technical processing were:extracting 2 times, soaking 40min, liquid ratio 1:15, microwave time 25s, microwave power 40%, solvent concentration 60%.2 As flavonoids index, the optimal technical processing were:extractingof 2 times, soaking 40min, liquid ratio 1:20, microwave time 20s, microwave power 60%, solvent concentration 60%.3 In hops drying paper, study the drying hops in the process of placing the way, temperature and convection condition on drying rate andα-acid loss ratio impact, results showed that the three factors on the drying rate andα-acid loss ratio have a significant influenced. The best of fresh hops drying conditions are: hops should be put in place is the way the high value of temperature from 40℃, convection situation in check increases. Different temperatures through the drying hops to preserve the experiment, reached dry hops in the -20℃cryopreservation more appropriate.4 Through the microwave extraction of the orthogonal test to determine the antioxidant components of hops flower the optimum extract conditions was ethanol concentration 45%, liquid ratio 1:20, microwave power 80%, microwave time 30s. The antioxidant effects of hop concrete was 630.36.5 Through the GC-MS to analysis aroma component of dry hop,hop drop and hop concrete.The result showed that aroma component of different hop samples was almost same,but it had small differences.6 Through the ICP-MS to determin the fifteen kinds of heavy metals content of dry hop,hop drop and hop concrete.The results showed that heavy metals content of hop concrete was less than ohers'.
