The W/O/W multiple emulsions with the paraffin oil as the oil phase were prepared by using two-step emulsification method.The effect of temperature, the agitate speed and the agitate time of the first step and second step emulsification on the stability of paraffin oil W/O/W multiple emulsion was investigated by determining the relatively volume ratio.The paraffin oil W/O/W multiple emulsion with the optimization stability at low temperature was used to encapsulate Vitamin-C with。The effect of paraffin oil content,emulsifier content,and the content of the first phase on the stability of paraffin oil W/O/W multiple emulsion was studied by determining the encapsulation of Vitamin-C.The optimization formula was obtained. The time dependence of encapsulation rate of Vitamin-C was investigated. The results showed that the encapsulation rate of 1% Vitamin-C decreased from 98.55%.to 93.88% when storage time changed from1 to15Encapsulation of BP-4 with multiple emulsion was also studied. The effect of paraffin oil content ,emulsifier content,and the content of the first phase on the stability of paraffin oil W/O/W multiple emulsion was investigated by determining the encapsulation rate of BP-4. Then the optimization formula with highest encapsulation was got. The time dependence of encapsulation rate of Vitamin-C was investigated and it was found the paraffin oil W/O/W multiple emulsion had excellent encapsulation ability for 1% BP-4 beside for Vitamin-C. The encapsulation rate of BP-4 decreased from 95.78% to 94.05% when storage time changed from 1 to 15。...
