Chong Yang wine of Miao nationality in Rongshui county of Guangxi province has distinctive national and regional characteristics, the brewing method of it still preserved well. Chong Yang wine not only used for drinking but penetrates in all aspects of the local Miao people's life. With Chong Yang wine we can pry into the historical culture and ethnic customs of Miao nationality from another perspective. Brewing Chong Yang wine is women's business, so from Chong Yang wine, we can detect the countless ties between Miao women and the whole Miao nationality's culture. At present, all researches about Miao nationality's culture mainly focus on the dress culture and festival culture, however, the researches of the diet culture, especially the brewing technology paid less attention, lacking field work.This paper bases on the previous studies, using textual research of literatures and the method of field investigation to record the traditional Chong Yang liquor-making of Miao nationality of Rongshi county in detail, including the investigation of selecting material, steaming bucket, container and making liqueur koji. The paper also trying to reveal the role of Chong Yang wine in local place and the social and culture function of it. Proved by archaeological matericals and literature textual research, the history of rice wine in China is very long and Miao people has mastered the brewing technology of Chong Yang wine not later than Ming and Qing dynasties. By compared with Yao nationality's Chong Yang liquor-making in Tonglian county of Rongshui and Miao nationality's sweet wine making in Lei Shan county of Guizhou, the paper analyses the regional characteristic of Rongshui Miao nationality's Chong Yang wine more deeply. At last, the author gives some suggestions on Chong Yang wine's market trend.
