Tenebrio molitor.Linneeus is rich in protein and fat. At present, researches are mainly about its protein and amino acids. Researches about Tenebrio molitor.Linneeus oil are very limit. Tenebrio molitor.Linneeus oil is rich in unsaturated fatty acids and the amount of unsaturated fatty acids reached 76.22%, its content of oleic acid, Linoleic acid and Fat-soluble vitamin is also very rich. The researches of Tenebrio molitor.Linneeus oil are of great value. The article optimized conditions of extracting tenebrio molitor.Linneeus oil by aqueous enzymatic method, especially its function properties were studied. Tenebrio molitor.Linneeus oil microcapsules were made withβ-CD. The results were as follows:(1) Response surface methodology was used in optimizing conditions, the best conditions were as follow: temperature of enzymatic hydrolysis 50.0℃, dosage of enzyme added 800.00U/g material, and the ratio of water to material 5:1, pH8.50, time of enzymatic hydrolysis 120min.Under these conditions, the extraction rate was 78.51%.(2) The quality of oil obtained by aqueous enzymatic method was better than that was obtained by petroleum ether. The nutrition of oil could be reserved well. The oil was determined by capillary GC-MS, 18 compounds were identified, and the amount of unsaturated fatty acids reached 76.22%. The content of oleic acid is 27.38%, and Linoleic acid is 43.31%.(3) Tenebrio molitor.Linneeus oil could reduce serum TC, TG, LDL-C level significantly, and increased HDL-C concentration, AI was also reduced. The oil could regulate lipid.(4) Tenebrio molitor.Linneeus oil could reduce MDA content of liver effectively, CAT, SOD and GSH-Px activity in liver were improved, and T-AOC of liver was also enhanced.(5) Tenebrio molitor.Linneeus oil increased the swimming time and glycogen of mice, and reduced the content of serum GUN and Lactic acid. The oil could reduce fatigue.(6) The best conditions of Tenebrio molitor.Linneeus oil microcapsules made withβ-CD were as follows: time 40min, temperature 40℃, the rate of water toβ-CD 25:1, the rate ofβ-CD to oil 8:1, under these conditions , encapsulation rate was 76.17%.The microcapsules were examined, and oil was encapsulated byβ-CD firmly. The antioxidant stability of Tenebrio molitor.Linneeus oil was enhanced.
