Cantharelles cibarius alias yellow silk fungus, apricot fungus, is a kind of outer root fungus, is the world famous wild edible fungus, is mainly distributed in Yunnan, Guizhou, Sichuan, Tibet and other provinces in China. Research have shown that Cantharellus rich in carotene, VA, VC, and calcium, iron, phosphorus and other mineral elements , is also rich in nutritional value and special medicinal health function. This topic used Cantharellus as raw materials extracted Cantharellus polysaccharide, isolation and purified them to study the structure and Properties of the chanterelles polysaccharide, also study on the nature of Cantharellus antioxidant activity of polysaccharides and its hypoglycemic effect, in order to expand the natural Cantharellus cibarius polysaccharides provide a theoretical basis and basic data.(1). Water extraction technology and Microwave extraction of Cantharellus cibarius polysaccharide was optimized by orthogonal experiments on the basis of single factor test. Study of the solid-liquid ratio, extraction time, extraction temperature impact on extraction yield of polysaccharides Cantharellus. The experimental results showed that the optimal experimental parameters were 85℃e xtraction temperature, 20:1 ratio of water to material, 2 hour extraction time, Polysaccharide yield was 8.93%.To explore through a series of experiments to determine the optimum extraction of the microwave extraction process conditions: 600W power microwave processing, extraction time of 35 min, extraction temperature 85℃, liquid feed ratio 55:1, in this condition, the yield of crude polysaccharide of 10.19%.The results showed that microwave can improve Cantharellus extraction yield of polysaccharides 14.1%.(2). Prepared by microwave extraction of Cantharellus crude polysaccharide ,through Sevage method Removal of proteins, macroporous resin decolorization, after dialysis by DEAE-52, Obtain the major separation component of CCP-2, which is white powder after freeze-dried. Through SephdexG-100 gel-chromatography analysis CCP-2 is Cantharellus pure polysaccharides.(3).By Cantharellus polysaccharide absorption characteristic of infrared spectroscopy to parse results showed that Cantharellus polysaccharide containing carboxyl is an acidic polysaccharide. HPLC results showed that Cantharellus monosaccharide composition including mannose, glucose, D-galactose and L-arabinose four kinds of simple sugars. Normalized by the peak area calculation can see, mannose, glucose, D-galactose, L-arabinose four kinds of single-sugar ratio of the amount of material 42.79: 49.56: 1.75: 3.78.(4). Through restore research, use of ?OH generated by Fenton system, as well as the DPPH ? research Cantharellus antioxidant activity of polysaccharides. The results show that Cantharellus polysaccharide has a certain reduction capacity, during the trial within the polysaccharide Chantarelle hydroxyl radical (?OH) and the DPPH free radical scavenging effect has a strong, clear the capacity with the increase of the concentration of polysaccharide increased.In the case of the same concentration, Cantharellus polysaccharide scavenging ability on ? OH weaker than the control group of Vc,But scavenging ability on DPPH? strong than Vc. Purified polysaccharide scavenging ability of DPPH ? and ? OH short on the crude polysaccharides, but it still has significance.(5). Through animal experiments to study the Hypoglycemic chanterelles role .In this study, three kinds of dosage polysaccharide include low, middle and high dose was took. all of the group (100mg/kg * d, 200mg/kg * d, and 400mg/kg * d) blood glucose values were significantly lower (P <0.01), hypoglycemic rates were 15.9%, 23.9% and 29.2%, indicating that Cantharellus polysaccharide have some effect of lowering blood glucose values. Detection of SOD activity in mouse liver, MDA content and GSH-Px activity showed: gavage Cantharellus polysaccharide after 4 weeks, drug control group, experiment with low, middle and high-dose group of mice liver SOD activity and GSH-Px activity was significantly higher than the value of the diabetic control group (P <0.05), liver MDA were significantly lower than the diabetic control group (P <0.01), shows Cantharellus polysaccharides can increase the body's SOD activity and GSH-Px activity in mice, scavenging free radicals, and inhibit the lipid peroxidation significantly.
